As promised, here’s the recipe for One pan Chicken & Rice
INGREDIENTS
2 tbsp avacado oil
5-6 Bone in / Skin on Chicken thighs
seasoned with cajun or favorite chicken seasoning ( allow to marinate 30 minutes or overnight)
1 1/2 cup basmati rice, rinsed
1 large shallot
1 tsp garlic paste
1 cup sliced mushrooms
1/2 tbsp vegetable broth paste ( dissolved in 3 cups warm water)
1 cup broccoli rinsed and seasoned lightly with salt and pepper
Season to taste!
DIRECTIONS
Preheat oven to 375
In oven proof large skillet , heat avacado oil on medium on stove top.
Brown chicken on both sides, approximately 4-5 minutes per side, transfer to plate.
In same skillet, add onions, garlic mushrooms.
Sautée till softened, add salt and pepper.
Add rice to mixture, toast for few minutes.
reduce heat to medium low.
Add water with broth to pan.
Stir then nestle chicken thighs evenly in skillet on top of rice and liquid
Cover with oven safe lid or foil
Bake in oven till rice is almost cooked through 25-30 minutes
Add broccoli , cover and return to oven for 5-6 minutes
last minute you can turn oven to broil if desired to crisp chicken skin and charr broccoli.
Serve from skillet and enjoy!
One Pan Chicken and Rice!

Mediterranean Poached Eggs
SIMPLE, DELICIOUS AND SATISFYING!
Morning eggs don’t have to be bland.
Another brunch idea using ingredients you already have on hand.
RECIPE BELOW

INGREDIENTS:
2 tbsp butter or avacado oil
2-3 eggs ( mine were a bit small so i used 3)
2 tbsp tomato paste ( i had an opened can but you can substitute any tomato marinara 1 cup- omit water if using marinara )
1/2 cup water
1 medium shallot ( sliced)
1/2 tsp crushed garlic
4-5 capers
1/2 tsp crushed red pepper flakes
1 tsp italian seasoning.
1 tbsp feta cheese crumbled
Chopped parsley
Directions
In small cast iron skillet (or favorite skillet)
melt 2 tbsp of butter or avacado oil
add sliced shallot and sauté for 2-3 minutes.
Add in garlic, chilli flakes, capers and italian seasoning, stir for a few seconds
To onion mixture add in tomato paste, stir to combine and add in water.
Bring to a light simmer.
Gently crack eggs into tomato mixture.
Cook eggs to desired doneness.
Top with salt and pepper, feta and parsley!
Serve with your favorite slice of toast!
I used a GF bread topped with a smoked salmon cream cheese spread!

I have been experimenting lately with favorite weekend brunch favourites that are GF and don’t compromise on taste!
These French Crépes get the TBSS ( the brown sugar shack) stamp of approval!
With the substitution of Oat milk, Cassava and Oat flour as well as monk fruit sugar substitute you can enjoy this brunch favorite guilt free!
Recipe below

French Crépes
1-2 TBSP melt butter ( or margerine if dairy free)
1 cup Oat milk
1 egg
1/2 cup Cassava flour ( sifted)
1/4 cup oat flour ( sifted)
1/2 TBSP Monk fruit sugar substitute
1/4 TSP salt
1/4 TSP baking powder
splash of vanilla extract ( optional)
In a blender, add all ingredients beginning with wet ingredients first.
Blend until smooth. Scrape down sides if necessary and blend again.
Batter should be thin. If too thick add few tsp of oat milk or melted butter.
In a shallow skillet or crépe pan brush with melted butter. Turn heat on medium low and heat pan.
Carefully hold pan and with swirl motion swirl pan while pouring batter in consistent stream till a thin batter is covering pan.
Allow batter to cook for 1-2 minutes on medium low heat till edges are slightly browned. Carefully* with spatula flip the crépe and continue to cook for 1 minute.
{*GF recipes generally lack the structure of traditional gluten recipes so batters and breads will require some gentle handling when forming or lifting from pan}
Slide on to plate and repeat with remaining batter.
This is a small batch recipe that serves 1-2 people. You can double or triple as needed.
