Smoked to perfection!

10 Brisket's on one of the uprights tonight. These go through 7 stages of smoke, heat and steam... 14hrs and 20 minutes. Consistently the same product for this high volume caterer.

Any favorites?

We use a variety of smokers from uprights to reverse flow. These trailered units have multiple rotisserie shelves, up to 12 on the bigger units. Ranging in length from 4 to 8ft of cooking space and are all heated with charcoal and hardwood. Hot and cold running water, gills and more!

Prime Rib Steaks! I smoked a whole boneless rib on my 360 for about 5.5 hours, let rest and then chilled. Cut up some fine 1.75-2" steaks, and then a quick grill/heat and serve. These were stupendous!

Going to be a beautiful day with some great food for a 24 hour facility.

Our squares/bars are always a hit and a low cost option when adding desserts to your menu. Accompanied by a fruit platter, they are a real crowd pleaser!

Early morning BBQ, the first of three shifts. Who doesn't like Chicken and Brisket at 7am!

Chicken, chicken and more chicken... please!?! We smoked a few hundred chicken breasts with dry rub and honey garlic. 1.45 hours on this smoker today, sauced half way through and flame kissed at the end. Also grilled 100 Angus beef burgers and a 150 Nathan's beef frank's.

Bone-in, skin-on chicken thighs! Shout out to . I have one of your 360's at the family cottage and love when I get the time to use it! (not very often) Smoked these little guys for almost 3 hours and around 175-225, few beers involved so I couldn't tell you the exact temp! 😆🍻. Chilled and grilled with sauce over high heat using lump coal on the same . Anyways, they turned out great...
