🍽️ Savory Lamb Chops with Herb Infusion | Délicieuses côtelettes d'agneau avec infusion d'herbes 🌿
INGREDIENTS:
- 10 lamb chops
- 1 tbsp. extra virgin olive oil
- 1 tsp coriander seed
- 1 tsp pink peppercorns
- 1 tsp black peppercorns
- 1 tsp flake salt
- 1 lemon
- 1 bunch parsley
- 1 bunch cilantro
- 4-5 garlic scapes or 2-3 cloves
- 1/3 cup extra virgin olive oil
- 1 tsp chili flakes
- 1 pint cherry tomatoes
INSTRUCTIONS:
1. Wash herbs, tomatoes, lemon, and garlic scapes. Zest and juice the lemon, chop the herbs, mince the garlic; set aside.
2. Coarsely grind coriander, salt, pink & black pepper together.
3. In a large bowl, mix 1 tbsp olive oil, ground spices, 2 tsp lemon zest, 1 tsp lemon juice, and 1 tbsp minced garlic. Coat lamb chops with the marinade; let rest for at least 10 minutes.
4. Grill lamb chops for 2-3 minutes on each side over high heat.
5. Sear tomatoes in the leftover marinade until blistered and charred.
6. To make the sauce, blend chili flakes, herbs, remaining lemon juice, zest, garlic, and olive oil until smooth. Add salt and pepper to taste.
7. Serve family style on a big wood board or plate with a bit of sauce, three or four chops, and some tomatoes.

The AMGA Story
A SECOND GENERATION FAMILY RUN BUSINESS
Founded in 1967 by brothers Angelo and Peter Mardas, Aliments AMGA was initially established as a poultry and egg distributor. During those early years, the brothers worked side by side out of a small location on Henri Julien in the heart of La Petite Patrie. In the years that followed, the company expanded to their product offering to include high quality meats, seafood and dairy products and in 1972 they moved to a larger location on rue Jean Mance. In the mid 1980's, to better serve the needs of their growing client base, they expanded the building, effectively doubling its size. This remained the head office and meat packing facilities for AMGA until mid-2015, when they made the move to their current location off the Transcanada Highway.
As the brothers' business grew, so did their families. Today, all six Mardas children are actively involved in running AMGA, under the watchful eye of Angelo and Peter who still come into work everyday.
With hundreds of products in its extensive catalog, AMGA has become a one stop shop for an ever increasing list of clients across Quebec and select areas in Ontario.Our extensive list of customers includes restaurants, supermarkets, reception halls, hotels, golf courses, hospitals, catering services, residences and various institutions, many of which have been with AMGA for more than 40 years.
