I told him I’ve been wanting to add a tartar to our menu, David not only encouraged me to add it he shared his supplier for QC veal with me. While I was experimenting with the recipe I sent him photos and ingredients, he advised me. What a gem. This type of camaraderie reminds me why I love this industry. Come through and try this dish a lot of love went into it. Some nights you can even catch me behind the garde section mixing, plating, and serving it myself.
