CHICK PEA CURRY RECIPE with ORGANIC CHICKEN!!! Get the ingredients at The Country Way!

3 cups Lundberg Brown Basmati Rice
2 cans Eden Organic Chick Peas
3 cans Native Forest Coconut Milk
2 GoBio Organic Chicken Bouillon Cubes dissolved in 1 cup boiling water
5 tsp. Organic Connections Curry Powder
1 tbsp. Honey
1 Fenwood Farms Organic Chicken Breast, cooked and seasoned with Paprika, Salt, Pepper, and Onion Powder
1 Onion
2 Stalks of Celery
2 cloves of garlic
salt and pepper

Bake the chicken and cook the three cups of rice and set aside.

Stir fry onion, celery and garlic in olive oil. Stir in curry powder, honey, salt and pepper. Add hot water with chicken bouillon cubes. Stir thoroughly. Add coconut milk, chick peas, and cubed, cooked chicken and simmer for half an hour.

For a Vegetarian option leave out the Chicken and substitute the Chicken Bouillon Cubes for Herb Bouillon Cubes.

Serve over brown rice with warm bread. Enjoy!
