The Diamond Collection features the best coffees, from the best farms in the world.
Upon arrival the green coffee is vacuum sealed in individual roast size batches and frozen. They are removed from the freezer 24hrs before roasting. This ensures the seeds are kept at their optimum freshness for an extended prior of time.
STC has multiple roasters of different capacities to facilitate roasting fresh for even the smallest order.

There are some coffee farms that set out to do the best coffee they possibly can.
These farms curate their variety selections with the most rare and sought after varieties and place them in the perfect plot on the farm to allow them to grow to their full potential.
These farms consistently have the best processing. Some of these processing methods are created by the farms themselves, elaborating on traditional processing and introducing new styles of fermentation from other industries. Some do traditional processing methods extremely well.
First and foremost these farms produce outstanding quality, consistently, year after year.
This is the Diamond Collection đź’Ž

This was one of the first few farms I ever visited in my coffee life. I stayed on the farm in the Perez Family’s home and it was magic. It has taken a while to get my hands on their coffee and it has been %100 worth the wait. I am beyond excited to share this coffee with you.
This gem of a coffee is super clean, a testament to La Soledad’s tremendous processing. When I drink this cup I see bright greens, yellow and orange. Reminds me of 5 Alive Citrus; tangerine, lemon, lime and grapefruit.
Super stoked to have this coffee back again for a second year running, especially considering it is only their third year of specialty coffee production ever!
The attention to detail in the processing at Mae Chedi is on full display in the cup. This time around we brought in an Anaerobic Natural processed lot.
If you like fruity coffees then don’t sleep on this one. It’s absolutely bursting!!
I cup coffee from the Gichathaini Washing Station every year alongside a couple other coffees that I regularly source from Kenya.
The coffee from Gichathaini always stands out but this year it is top of the crop!
It's super sweet with a bright acidity making it extremely juicy. Just like a classic Kenyan coffee should be in my opinion.
I see vibrant greens while enjoying a cup of this gem.
Hey babies đź‘‹
It’s time for me to take a little break.
Roasting is on pause until Oct 8th.
If you have an outstanding order it will be roasted tomorrow and shipped out Monday or delivered in person on Tuesday.
Thanks for your patience and understanding. Your support for my little business is amazing 🙏
Some of the best Brazilian coffees I have ever tasted come from the Heringer Family.
After visiting Fernando a few years back it has been my mission to work with him each year. It has been amazing to be a part of his journey and I'm stoked to bring his coffee to Canada.
This lot is a crazy clean natural. It's Fruity & Fun, loaded with tropical fruit flavours. This is not your typical Brazilian coffee.
From FAF:
Sitio Vista Alegre are two small farms by the same name. One is run by uncle Walter Heringer and the other by nephew Fernando Heringer. We took their best lots and blended together to make this coffee. These farms are on the western wall of the Pico da Bandeira National Park. Their farms are at very high altitudes but tucked in neatly into the mountain side in a way that their coffee trees have some protection from the wind. The picking here is done selectively and the drying is meticulous on raised beds. This region has always had high potential but not many farmers doing good practices, these to bucked the trend. They are some of the highest quality producers in CaparaĂł for sure, their attention to detail and dedication to quality is special.
This gem of a coffee is the definition of smooth and easy. It's creamy and chocolatey with a sweet orange note.
Reminds me of Terry's chocolate orange.
Light brown colours flash in my mind plus there is a hint of orange that pops up.
El Pedregal is a family farm run by Fidencio Castillo and his daughters.
The Sodré Family is setting a strong example for the farmers in the Espirito Santo region of Brazil. Focusing on the human and environmental side of coffee production has resulted in increase an in cup quality year over year. Investing in the farm and in the people who work the farm is equal.
This is our longest standing relationship at STC and I feel honoured to be able to share this coffee with you again this year.
This years crop makes me think of Black Forest Cake and Maraschino Cherries with visions of red velvet.
Every year I try my best to find a high quality fully washed coffee from Brazil. It’s not the traditional way coffee is processed in Brazil and so it’s uncommon and hard to get my hands on.
This coffee has made me question why more coffee from Brazil isn’t fully washed! Edivaldo Cunha’s coffee is absolutely fantastic. It’s clean & crisp, bright and juicy.
This is my first year buying coffee from Edivaldo and I hope to continue this relationship for years to come. He has big plans for more lovely washed coffees with new exciting varieties. I can’t wait to see them unfold.
It’s new!
This little gem is smooth and easy going, a daily driver type coffee that fits beautifully in our Amber Collection.
It’s a washed caturra from Finca La Cocha in Colombia 🇨🇴
Available now on the website and at a Found Coffee near you.
Cafe Granja La Esperanza is synonymous with quality. The coffee produced at their family of farms are used in coffee competitions around the world.
I have had the pleasure of visiting a couple of their farms and the care taken at each step in the coffee chain is truly remarkable.
This pack features 1 incredible auction lot coffee from 3 different farms within the CGLE family: Finca Hawaii, Finca Potosi & Finca Las Magaritas.
These might be the best offerings from their respective farms I have tasted to date. Wow. Just wow.
Finca Potosi: Honey Sidra x 25g
Finca Hawaii: Anaerobic Natural Mokka x 25g
Finca Las Margaritas: Anaerobic Natural Sudan Rume x 25g
3 new coffees!!
Well it’s actually 1 new coffee from Francy Castillo of Finca El Uberrimo in Colombia 🇨🇴
All 3 lots are the Caturra variety but each one is processed differently. There is a washed, a honey and a natural process.
I’m super happy to be able to offer this little collection of coffees. It is an excellent way to taste how processing affects flavour.
Felt cute. Might delete later
More Gesha Village 🤯
I went a little overboard for a total of 5 lots of Gesha Village in Ethiopia 🇪🇹
These next 2 are the Gori Gesha variety, one natural process and one washed process.
The natural is fruity & fun, while the washed is clean and crisp with a classic Gesha cup profile.
These coffees are available now and will be included in the May subscriptions too!
I am beyond excited to announce the release of these 3 special coffees from Gesha Village Estates in Ethiopia 🇪🇹
This is the first ever offering of the Illubabor Forest variety at STC and the first time we have included a coffee from Gesha Village in the regular lineup.
These 3 coffees will feature in our next months coffee subscription. This is a special treat to say thanks for being a loyal customer. If you haven’t subscribed yet now is most definitely the time.
Next up for the Rare Pack is quite possibly the best coffee Mexico has to offer. Brought to us by the La Joya Micromill in Veracruz, specifically from Samuel RonzĂłn.
I was introduced to Samuel Ronzón’s coffee a few years ago and they have featured on the site as a standout offering from Mexico ever since.
La Joya is all about experimentation. They are continuous searching for new ways to process coffee to bring exciting new flavours to the cup. If you like fruity coffee then don’t skip this pack.
In this pack you’ll get 3 x 75g bags of Yellow Caturra each with it’s own unique processing. The slight variations in processing have large impacts on the cup which I think is pretty dang cool.
Lot GPTSM - 120 hours Fermentation / Oxidation in GrainPro bags with controlled temperature. This is followed with 20 days total direct drying in African beds, interrupted drying for 15 days up to 20% humidity and 10 days to finish.
Lot AP GPTS - 144 hours enclosed in GrainPro with controlled temperature. This is followed with 20 days total direct drying in African beds, interrupted drying for 15 days up to 20% humidity and 15 days to finish.
Lot AGP - 144 hours enclosed in GrainPro with controlled temperature. This is followed with 25 days total direct drying in African beds, interrupted drying for 10 days up to 20% humidity and 10 days to finish.
Check out this offering from Hacienda La Papaya in Ecuador 🇪🇨
I am loving this coffee right now. It’s so clean, so juicy and has this awesome soft spice to it.
The Sidra Variety is one of my favourites at the moment and if you’ve never tried one before this is a great opportunity to taste the characteristics of this variety.
The next coffee producer to be featured in the Rare Pack is Janson Coffee from Panama 🇵🇦
I must admit that it is exciting when I hear about a producer with the desire to produce the best coffee possible! Janson Coffee is new to me but from what I hear they shouldn’t be.
A family run operation with many of them living on the farm. A unique climate not particularly high in elevation but surrounded by lakes and volcanoes.
From what I can see the processing is top notch and the quality in the cup shows it. This is Janson Coffee.
In this Rare Pack you will get 3 Geshas each with its own processing, a Washed, a Honey & a Natural.
This is a great opportunity to taste the effects that processing has on coffee!
THIS IS A PRE-ORDER PRODUCT

Mae Chedi is back!! 🇹đź‡
This year I brought in an Anaerobic Natural Process lot and it is absolutely bursting with fruit flavours!!
This coffee is the definition of the Ruby Collection. Fruity & Fun. Funky and Exciting.
If this sounds good to you don’t miss this one and be sure to check out the other Ruby offerings.
The next Rare Pack is up!
Roasting February 6th.
Ecuador is quickly becoming one of my top countries for high quality coffee. I think that each year the amount of top notch coffee available is increasing and I’m looking forward to bringing in a bunch more coffee from Ecuador in future.
In Ecuador, Hacienda La Papaya is most definitely one of the best producers of quality coffee for me. Lots of good info from the importer below.
This is what’s in the pack:
50g Washed Gesha
This Gesha represents the first harvest of Hacienda La Papaya Gesha, first planted in 2018 with seeds from Boquete, Panama. The cup profile is intensely floral, with high sweetness, a pronounced and refreshing acidity, and a warming full body mouthfeel. The process sees a 15 hour mucilage open-air fermentation in ceramic tanks, followed by 11 days of drying in controlled temperature and humidity rooms.
50g Natural Gesha
This Gesha represents the first harvest of Hacienda La Papaya Gesha, first planted in 2018 with seeds from Boquete, Panama. The cup profile has complex florals defining the cup, with honey like sweetness, a fruit driven acidity, and a syrupy mouthfeel. The process sees a traditional whole cherry rotated numerous times daily for 25 days on raised beds.
50g Anaerobic Washed Typica Mejorado
This Typica represents an elevated take on a classic cup profile from Hacienda La Papaya. The fresh cherries are pulped and passed to a polyethylene tank to be fermented together with the liquids produced from fermentations that have passed up to 100 hours. The temperature are kept cool, not exceeding 24C. The coffee is dried in controlled temperature and humidity rooms for 30 days.
New Decaf up
Daterra is one of the largest coffee farms in the world. They are continuously improving and experimenting to produce new and innovative ways to grow, harvest and process coffee in Brazil.
This particular lot is interesting. Rather than being dried on raised beds, it was dried as a natural on the coffee trees themselves before being picked and sorted.
This little gem has a classic Brazilian flavour profile, it's smooth and easy to drink. It makes me think of sunshine.
This coffee is Warm & Welcoming and fits beautifully in our Amber Collection.
La Fortaleza is back baby!! Another outstanding offering from Ecuador and a crowd favourite this coffee is sure to please just about everyone.
We have been working with Carmen Gagnay for a few years now and we are consistently impressed by the quality of the coffee at Finca La Fortaleza. Carmen is a master of the Washed Process which produces a Clean & Crisp cup of coffee. The Bourbon Variety really showcases itself in this cup of coffee. It has a good body, some nice citrus acidity and a beautiful floral note that adds some complexity.
This gem of a coffee fits perfectly in our Emerald Collection
I’m 5 years old today‼️
Totally stoked and I can’t thank you all enough for the love and support you’ve shown me.
Hope you like the new bags, new website and the new approach to finding your perfect cup.
