Wildwood from is a worthy Ontario tribute to the alpine greats. 🇨🇦🐄
Located in St. Mary's, Ontario, Stonetown Artisan Cheese was founded in 2015 by Hans and Jolanda Weber who immigrated to Ontario in the mid-nineties. Together with master cheesemaker Ramon Eberle, the dairy produces more than half a dozen award-winning farmstead cheeses.
All the milk used is unpasteurized and comes from the family's own herd of more than two hundred happy Holsteins. Brine-washed and aged for eight to twelve months, Wildwood features a rustic rind and creamy golden paste. On the palate, complex, rich notes of toasted nuts are followed by a slightly herbaceous and savoury finish and finely balanced salt.
Perfect for lovers of Comté and Gruyère, Wildwood is fantastic in sandwiches. It's also an excellent melter!

Owner and cheesemaker Caroline Pelletier has raised Jersey cattle for more than twenty years. Even when away studying, she would come back every weekend to take care of her cows. The result is a truly special herd that has been carefully formed from generation to generation.
A robust animal, Jersey cattle adapt well to the varied Québec climate and have a smaller ecological footprint than other breeds. Their milk is also rich in fat, proteins & nutrients, making it an excellent choice for cheesemaking.
Soft-ripened and aged for up to ten days, Le Jersey Royal has decadent flavours of butter and cream. A standout on your next board, this cheese is also perfect for elevating your sauces and burgers.

Idiazábal A.O.P. is a smoky delight! 🇪🇸🐑
This traditional sheep's milk cheese comes to us from the green valleys and craggy peaks of northern Spain, where cheesemaking has been practiced for centuries. Each summer, shepherds usher native Latxa and Carranzana ewes up the mountains to enjoy the new, lush grass. Known for producing a rich and buttery milk, the resulting cheese is left to dry by the fire, where it takes on a gentle smokey flavour.
Awarded protected status in 1987, Idiazábal is still made today in deference to these original methods. Developing an inedible caramel rind, the paste is springy and toothsome with small eyes, while the flavours are irresistible: smokey-sweet, lactic, and complex.
The perfect summer snacking cheese, we recommend pairing Idiazábal with a slightly chilled red like Tempranillo or a dry cider.

Have you tried the Queso Ibérico? 🇪🇸🐄🐐🐑
Not as well known as its older brother Manchego D.O.P., Ibérico is nonetheless an iconic cheese in its own right and incredibly popular in its home country.
Produced year-round in La Mancha, a vast, arid plateau located south of Madrid with a unique character, Ibérico is aged for a minimum of two months. Cheeses sold under the Ibérico name must also be made with fresh milk that is at least 50% cow, 15% goat, and 15% sheep. The resulting paste is creamy, salty and herbaceous, showcasing the best traits of all three milks, while the inedible rind bears the famous basket weave imprint.

Featuring a beautiful line of vegetable ash through the centre, Le Cendré de Grands-Jardins is a pasteurized cow's cheese from Laiterie Charlevoix. 🇨🇦🐄
Inspired by Morbier, this cheese is named for the nearby Grands-Jardins park, which was marked by a forest fire twenty years ago. Aged for forty-five days, your first glimpse of this cheese will be its pillowy, orangish rind and supple cream-coloured paste. Sweet, grassy aromas are followed by tasting notes of fruit and a subtle farmhouse tang.
Did you know? 🧀 While it's considered largely decorative today, the historical practice of sprinkling your curds with a thin layer of vegetable ash was developed in the nineteenth century to separate the evening and morning milking - and prevent a rind from forming.

With its lovely green-pink colouring, the sweet yet powerful Bleu d'Auvergne is a great summer blue. 🇫🇷🐄
Hailing from the Rhone-Alpes region of France, this cheese was awarded AOP status in 1996 and is named for its place of origin. Made with milk from cows that have grazed on the lush summer and fall mountain pastures, Bleu d'Auvergne is less salty than its cousin Roquefort but just as intense.
With a crumbly and delicate texture, the rind is moist and sticky, unveiling a creamy paste that grows spicy, herbaceous and pungent with age.
Perfect for adding to your favourite hot pasta dishes, this French blue also pairs well a robust red or sweet white wine.

One of our cheesemonger's favourites, Chimay Grand Cru is an authentic Trappist cheese produced by the monks of Scourmont Abbey. 🇧🇪🐄
Made using fresh, local cow's milk, this cheese matures for four to six weeks. Washed regularly with Chimay beer, it undergoes a wonderful transformation, taking on a delicate, ye**ty aroma that may remind your palate of fresh-baked bread. With a distinctive, Oka-like rind, the paste inside becomes supple, with pungent notes of leek and onion and a deliciously tangy finish.
Perfect for snacking, this cheese, of course, pairs fantastically with a Chimay beer!

Celebrate National Caviar Day with Canadian sturgeon caviar from
Caviar Co., led by Cornel Ceapa, is a family business specializing in sustainable, delicious and exceptional Canadian sturgeon.
Their Emerald tier caviar is sourced from shortnose sturgeon farmed in an environmentally responsible, land-based flow-through and water reuse system. It takes six to nine years for these sturgeon to mature, producing a caviar akin to ossetra with a grain size of 2.5-3.0mm, boasting a greenish hue with amber reflections.
