While we stay wildly busy behind the scenes preparing for the shop, we’ve also had one of our most synchronized restocks ever and there are so many wonderful coffees that have just been added to the shelves!! Of the 38 coffees available right now, we have traced the long term trade relationships between coffee producers and coffee roasters on 26 of them. We play one small part in helping to continue the equity focused trade relationships our roasting partners have with producers. Thank you for being a part of that! ✨ 2022 Coffee Recap - Part Two ✨⁣ ⁣ Countries of origin: 144 (Highest volume: Colombia (41), Ethiopia (17), Guatemala (14), Costa Rica (11))⁣ ⁣ Growing regions: 68 (Most growing regions: Colombia (10), Guatemala (9), Costa Rica (6), Ecuador (5), Rwanda (5))⁣ ⁣ Producers (single farmer lots, cooperatives, & smallholder lots gathered at washing stations): 121⁣ ⁣ Coffees that were sourced through ongoing trade relationship for the roaster: 63⁣ ⁣ Coffees that were sourced through ongoing trade relationship for the roaster that we’ve shared for more than one harvest: 36⁣ ⁣ Producers from whom multiple lots were sourced in the same year: 27⁣ ⁣ 45 varietals of coffee represented 213 times across 144 coffees. (Most represented: Caturra (36), Bourbon (31), Colombia (16), Catuai (14))⁣ ⁣ Decaf/half caff coffees shared: 7⁣ ⁣ Through all that you see and all that you don’t is the labour, experience, and slow relationship building from cultivator to roaster to us to you. With a whole lot more in between, including but not limited to the processing, milling, exporting, shipping, importing, and on ground transportation. ⁣ ⁣ Our takeaways:⁣ ⁣ Gathering detailed data around our sourcing is a useful tool in setting goals and in the process of maintaining relationships.⁣ ⁣ A number of new roasters came on board in 2022, and as such, we haven’t yet had the opportunity to share the coffees they’ve sourced more than once. To each customer and roasting partner who’s chosen to be a part of our community as we have navigated small business our own way in 2022 - we are so deeply grateful for you! Our business doesn’t look anything like what we’d expected it would when we launched two and a half years ago, and because of that, we’ve literally had to pause, not rush, and really consider how we want to operate along the way. That slow approach has afforded us the opportunity to take an approach to business that we hadn’t experienced before. While it has been extremely trying, it feels a whole lot more like us, like the kind of culture and community we want to be a part of - committed to inclusivity, accessibility, and equity for the long haul. Through deliveries, subscriptions, pop-ups, community coffee drop-offs, coffee boxes, and everything in between we are so so appreciative of the support you’ve shown us. What a year it has been! Ever notice your coffee is draining really slowly when using a dripper? Really fast? One of the benefits of grinding coffee fresh with a burr grinder is being able to adjust the grind setting to accommodate each unique coffee. (Roast, processing method, coffee varietal, and growing conditions all play a part!)⁣ ⁣ When we first brew a coffee, we start off at a 17 on the Baratza Encore, a medium coarseness. Brew, taste, and decide if we think it could be better. ⁣ ⁣ Looking at drawdown time (usually aiming for 4 to 5 minutes for 400g of water through 25g of coffee for a pourover), and tasting (do we like it?) are two really quick and simple ways to check if we’re getting the most out of a coffee.⁣ ⁣ Do you adjust how you grind and/or brew for different coffee beans? The @pureovercoffee in action! (+ recipe below!)⁣ ⁣ We’ve been getting acquainted with our new Pure Over pourover system over the last week and are ready to share!⁣ ⁣ It’s SO simple to use. ⁣ It produces a really clean and fresh tasting cup of coffee. (The clarity in the cup honestly took us by surprise!)⁣ It’s SO easy to clean!⁣ It saves a ton of filters from the waste bin!! ⁣ ⁣ ———————————————————————————⁣ ⁣ Pure Over Recipe⁣ ⁣ 20g coffee ground on the coarse side of medium (23 on the Baratza Encore)⁣ 250g water⁣ ⁣ Empty grinds into Pure Over Brewer and gently shake to level. Place brewer over mug or carafe and place diffuser lid over top of brewer. ⁣ ⁣ Pour 50g water through diffuser lid over the bed of coffee to bloom. Let rest 30-45 seconds. ⁣ ⁣ Pour 200g water through diffuser lid over bloomed coffee. ⁣ ⁣ As water draws down through the grinds, stir one or two times to agitate settled grinds and increase speed of pass through. Brew time should be between 3:30-4:30 minutes. ⁣ ⁣ Once fully drained, take brewer off of the mug and enjoy!⁣ ⁣ ———————————————————————————⁣ ⁣ After a bit of playing around, we figured out our optimal grind setting: 23 on the Baratza Encore. With this setting we get a quick draw down time through the filter with a bit of sediment at the bottom of our cup. Like with other filterless brew options like the French Press, a bit of sediment is to be expected, but because this one relies on pass through brewing rather than immersion, it results in such a clean tasting cup of coffee!⁣ ⁣ The Pure Over brewer is available to order now on our website. ⁣ ⁣ pausecoffeeshop.ecwid.com

Our brew routine in full and varying intensities of hyper-speed for your viewing pleasure - enjoy!⁣ ⁣ • Wet filter, dump excess. ⁣ • 25g coffee, medium grind (between the 16 and 18 point notches on the Baratza Encore)⁣ • make a well with chopstick⁣ • 50g water to bloom, 30-45 seconds until coffee bed just begins to deflate⁣ • pour to 200g in spiralling concentric circles, let drip until coffee bed is just exposed but still wet looking⁣ • pour to 300g, let drip until bed is again just exposed⁣ • one final pour to 400g, let drip until finished ⁣ ⁣ We aim for 4:30 to 5:15 brew time, depending on the beans. ⁣ ⁣ Happy Sunday! Euclides Sanchez El Calmante roasted by @thecolombianyeg 🍊🥤 🍑 ⁣ ⁣ With impressions of orange soda, stone fruit and panela, the aroma reminded me of alllll the fresh fruit at the farmers market. ⁣ ⁣ As a pourover, the taste reminded me strongly of Orange Creamsicle kombucha by the gals over @goodspiritkombucha with a soft hint orange and a light note of vanilla.
