Hey Friends!

Last week we touched on the early stages of tea.  For today's Tea Tuesday we'd like to share with you the following steps in the tea making process
🌱Harvesting/Picking
🌱Withering
🌱Rolling
🌱Oxidation/Fermentation  
🌱Drying/Fixing

Once a tea plant is at least 4 years old it is ready to be picked. Now you may think that machines take over when the plant is ready, however that is not the case. Machines often ruin the quality of the tea leaves leaving the tea bland and un-flavourful. Therefore tea leaves are hand picked!

Right after the tea leaves are picked a couple of hours later they are sent to a factory to start the Withering process to get rid of the moisture from the leaves to start the fermentation process.  

When the Withering process is complete tea leaves are then rolled by a machine. Yes we said machine, this helps promote the breakdown of the leaves to help release essential oils which gives leaves that aroma and flavour. Later teas are left alone to oxidize also known as fermentation which also contributes to the strength and flavour of the tea. To stop the oxidation process the leaves are then set to dry by pan-firing, sun drying or baking. After all these steps the tea is now ready for Grading, Testing, and Packing.
