Hung Lay is a Northern Thai curry dish that is inspired from Burmese and Indian cooking. The curry is different than most other Thai curries as it does not have coconut as a base. There are also no vegetables in this dish. There are a number of herbs and spices in this dish including garlic, galangal, shallots, tumeric, cumin, and ginger. The meat is slowly cooked to keep it nice and tender, and allow the tastes of the curry to deepen. Typically pork, beef, or buffalo (which we dont serve).
