Testing out flours from our local West Country Mills 🥰 I can already see a difference in color and a bit in the dough texture. West Country mills flour has more protein %, which is excellent for sourdough products. 🫶🏼 Can’t wait to compare the final products.

I also started my work on artisan flavors 🥰

Hello guys 👋🏻 I get many requests on Rustic Rye Sourdough if it’s in stock. 🍞 We don’t make extras. As wish you to get a fresh loaf every time. BUT!

I’m with a bit of an update 😌 I tried out to make toaster bread 🍞 in two variations:

1. White bread on white bread flour starter. (100% hydration starter)
2. 80% whole wheat loaf made on a 100% hydration rye starter.

💡 Interesting fact - both loaves were made at the same time, fermented in the same conditions, and proofed the same amount of time 🙂 Whole-wheat loaf has more of a sour taste 😎

In the beginning, I also “raised” a whole wheat starter, which ended up super acid-sour, and I decided not to use this type of starter at all. 🙃

• white
• whole wheat

"If that would be so easy - someone else would have done it already 😁 " - says my husband whenever I'm ready to give up.

Many of you are asking, what are our plans❓

WE ARE WORKING 🙌🏻 on opening a storefront bakery. I need to understand how the Canadian system works, so I must also dig into this subject. 😊 It takes time.

It isn't elementary to find all the equipment that we need. Most of it has to be delivered from overseas. 🙃 but we are working on it.

Butter - butter is my biggest headache 😅😅 I sleep and look for butter with a high % of fat even in my sleep. 😂 We don't use margarine in our product line, and need butter 82% and higher. Finding the best quality ingredients available in bulk for full-cycle production takes time.

So yeah...we are working on it, but we are always ready to bake whatever you want from our catalogue. 🙂 At the moment, we are baking on request.

We passed the “bagel disappearing” test 👌🏻😂 it’s like: I spend two days making them, and they all “disappear” in a couple of first hours after baking 🥰 That’s a moment I know - I can show out a new product for you.

I THOUGHT THAT WAS A DEAD END 😂 I would never get out of.

🍭 Our house always had a lot of fruit, chocolate, sour, sweet, chewy, lollipops, and mint candies. My husband still can't live without them 😂

It didn't bother me until I had to find a way to explain to our sons that eating too many candies is bad for their teeth and health.🤷🏼‍♀️

Though it's difficult to tell them not to eat something that someone on the next chair is eating 🤔

Our younger son is a huge sweet tooth that can't live a single day without sweets.

The older one likes candies but doesn't eat fruits except for apples and bananas. Vitamins, how do we get you?!😂

One day I found a profile of a girl who sold fruit roll ups in Kyiv. 🇺🇦 That was a double catch with one shot. 🎣

Surprisingly, Max&Nick both got hooked on those. 😂

Now I don't have to hide or control how much they eat of roll ups. Just leave fruit rolls available on a table anytime. There is nothing else as fruit mesh and maybe a little maple syrup in it 😉👌🏼
