To celebrate the one-year anniversary of the opening of Kappo Sato, Chef Kashiwabara - a sushi chef from a long-established sushi restaurant for over 20 years, along with Chef Sato, Canada’s fastest Michelin Star winner and Canada’s No. 1, will collaborate on this special occasion.

Chef Kashiwabara and Chef Sato will offer a special one-night-only “Sushi Kappo” menu on January 9, 2024.

This special tasting menu will be paired with selected sake handpicked by our sake taster. Enjoy this sushi kappo experience in the one-of-a-kind setting that will redefine your expectations for omakase sushi.

Winter Kappo is now available.

Kappo cuisine, often referred to as “Kappo Ryori,” is a traditional Japanese dining style that emphasizes the chef’s skillful preparation and presentation of a multi-course meal, usually consisting of small, artfully crafted dishes. The term “Kappo” translates to “to cut and to cook,” reflecting the chef’s involvement in both the preparation and cooking processes.

【食欲の秋】
The term “autumn of appetite” was coined from a uniquely Japanese sensibility and custom, referring to the autumn delicacies that arouse one’s appetite. In Japan, there are many seasonal customs and events, of which autumn is especially emphasized as a season for enjoying gastronomy!

Japan has four seasons, and autumn is also called the “harvest season” because it is the time when rice, fruits, and other fruits bear fruit and are ready to be harvested. According to the calendar, the autumn season is from September to November.

The Michelin Guide, known for its discerning standards and commitment to highlighting exceptional dining establishments, has awarded a Michelin Star upon Kappo Sato.

“ We are proud to receive this Michelin Star, a testament to the passion and creativity of our culinary team. We owe this incredible achievement to our dedicated staff, our trusted suppliers and our loyal patrons who have supported us from our restaurant opening in 2022,” said the owner chef, Takeshi Sato, who has been instrumental in shaping Kappo Sato's culinary identity. Chef Takeshi Sato had previously served at a Michelin-starred Japanese restaurant in Tokyo before assuming his position as the official chef of the Japanese Consulate General in Toronto in 2011.

【Soba】
Fall menu is launched
Soba is a type of Japanese noodle made from buckwheat flour. It's a popular and traditional dish in Japanese cuisine. The name "soba" refers to both the noodle itself and dishes that are prepared using these noodles. Soba noodles are thin and long, similar in appearance to spaghetti but with a nuttier flavor due to the buckwheat flour.

"Fresh fish" It can be said that Japan's unique Japanese cuisine, including sashimi, has developed around fish. Chef Sato's many handicrafts and innovations are hidden in fish dishes.

"Season" At Kappo Sato, our menu changes with the seasons. We use the season's ingredients in abundance, and the highlight of Kappo Sato's cuisine is that you can feel the change of the season with all five senses.

"Tableware" may seem a little surprising, but it is also one of the most appealing aspects of Kappo Sato. While most Western courses are served on white porcelain or glassware, Kappo Sato offers a variety of dishes made mainly of ceramics, which are unique in color, shape, and texture. Chef Sato chooses dishes that match the color and season of the dish so that the dish is perfectly matched to it.
