Reflecting on the promise of growth on this rainy Spring day. We’re so grateful to the Earth for the gift of coffee, and to the farmers caring for their plants at every stage, until they are ready for the long journey to our roastery.

IT'S ANA SORA DAY. 🍓 Our last release of '23 is our most anticipated. Ana Sora is a private estate in Ethiopia's Guji Zone owned by Israel Degfa. His heirloom coffees grow at soaring high altitude which slows maturation to a crawl and creates intense fruit complexity.

To lean into that complexity, it's been naturally processed and roasted on the lightest end of our spectrum.

This fruit bomb has earned it's reputation as the most adventurous coffee we source.

Meet the Roaster! Tiff is the bright mind and palate at the helm of our Probat. She has a diverse background as a coffee pro and has roasted from here all the way to the UK!

"My passion for coffee goes beyond just a job. I am always fascinated in learning about the efforts that go into creating a cup of coffee, beginning at the hands of farmers around the globe. I am consistently working towards educating consumers how we can work towards more fair practices in coffee consumption."

Tiff is en route to Nicaragua to participate in – the most prestigious competition and auction for high quality coffees. Here she'll have the opportunity to undergo sensory training and calibration with professionals from all over the world, and even visit some coffee farms!

We're so happy that Tiff has the opportunity to visit this beautiful region, and be a sponge of knowledge to share with our team. 💛

IT'S GESHA DAY! It's hard to pick a favourite from Finca Catalan de Las Mercedes, but there's no doubt, this one's at the top of the list.

Catalan 'Gesha' has wonderful vanilla sweetness and bright citrus acidity. Perfect for the warmer months, and available to enjoy today.

There's a long list of factors that make each coffee unique, and it can feel a bit overwhelming. We try to create open coffee dialogue in our cafes (thanks to folks like Sarah) to help find what you're looking for.
