Dough is so fascinating, sometimes I think about it all day. For me it’s a living being. We’ve been using the same mother dough since 2020. Hundreds of generations later Capi’s dough just keeps getting better. We’ve been using organic 00 flour for about 2 years now and I’ll never go back. It smells like wheat, not bleach. With organic stone milled whole wheat mixed in and fermented for days, making a quality pizza dough has been an obsession of mine.
