I’d been a pastry chef for less than 2 years then, and would spend hours working on cake designs. Because I looooved a good looking cake!

This one is gluten free, with passion fruit and mango.
The crust: house-blended organic gluten-free flour, organic eggs, organic butter, organic cane sugar, organic vanilla, organic cinnamon.
The filling: luscious organic cream cheese, all natural cream, organic cane sugar, organic sour cream, organic vanilla, organic lemon juice. Passion fruit purée and fresh organic mango.

I made *a lot* of trays as a special request for an event, and made one extra for us.
It did not disappoint! All homemade from scratch: Graham cracker crust, dark chocolate pastry cream, and vanilla marshmallow. Cut up a slice and torch it right before serving. Soooo good!!

About this weekend…
I had a friend, from when I was a student in Canada 23 years ago, over with her family for a pit stop on her way to her final holiday destination. What an absolute pleasure it was to catch up after all these years!!
For the occasion, I made my signature lemon meringue tarts as well as a chocolate and hazelnut tart, composed of a sweet crust, crispy praliné, salted butter caramel, dark chocolate ganache, and milk chocolate whipped ganache, finished off with roasted hazelnuts.
Good friends + good food = PERFECT combo.

Birthday weekend!
I made a triple chocolate mousse cake with some crunch on the bottom. I usually make it with a hazelnut praliné but adapted it to a nut-free version because of allergies.
About this weekend (part 1)…
The 2’ high, 2-tier celebration cake took centre stage, with 2 different kinds of cakes hiding behind the buttercream icing: coconut, passion fruit and lime on the bottom, tiramisu on the top.
Also enhancing the pink and gold colour palette were all sorts of mignardises: petits choux, raspberry panna cotta, vanilla cake pops and strawberry shortcake cups.
Oh and my signature classic chocolate ganache cake was there too 🤪😁
It was super fun making all of these for a very special customer.
Latest little creation: the chocolate bar-ette, a set of 8 Barry Callebaut Alunga chocolate topped with organic cranberries, pecans, cashews, and crispy dark chocolate pearls.

The bad boy is composed of an almond dacquoise, passion fruit curd, lemon mousse and some coconut sprinkling on top for good measure (and to enhance the citrusy flavours).
Oh this pistachio and chocolate birthday cake was a smashing hit!!
We’re absolute nut fanatics in our house so when my husband requested a pistachio cake for his birthday, I obliged and went completely overboard (no sorry, you’re right, there’s no such thing as too much pistachio…)
It’s composed of
- pistachio dacquoise layers
- pistachio diplomate cream filling (made with homemade pistachio praliné)
- milk chocolate whipped ganache
- the cutest mini pistachio choux filled with pistachio cream
- dark chocolate shards to finish off the look.

Last week I took up the challenge to make gluten-free, dairy-free, nut-free and refined sugar-free high end desserts for a private event. This is one of them.
—> Pavlova with an old school dark chocolate mousse, raspberry coulis and fresh raspberries, and a lavender espuma.
I used coconut sugar and maple sugar as sweeteners as the client didn’t care for cane sugar.
Quite the challenge!
