A classic English Ale, with malt and hops in perfect balance, Matusa is approachable and endlessly sessionable. Scottish Pale Malt, Fuggle hops and our house English Ale yeast are all we needed to bring this timeless beer to life. Sometimes the elders know best.

Next Saturday June 27th, welcomes our good friend for an in-formal “Meet The Winemaker” event at Bar Volo (17 St Nicholas). We have been following Jacopo’s wine projects for a few years now and we are pleased to represent his wines in Ontario for the very first time! This is a non-ticketed event, and we will just be pouring these wines by the glass starting at 7pm.

𝗔𝗕𝗢𝗨𝗧 𝗦𝗔𝗠𝗢𝗗𝗜𝗔

A name that encompasses the project between and safeguarding a wine region Valsamoggia within Emilia Romagna, which has been marginalized and underestimated, where wine-growing is disappearing today. It will produce the wine of the valley using only native grapes with historical and traditional methods of the great grandfathers. Two simple wines, a white and red that will represent local and daily wine for the people. The plots are 3 hectares of old vineyards at the highest point of Valsamoggia, with integrating of special contributions from small, precious vineyards, managed by private “grandfathers” who will farm the grapes for the project.

𝗩𝗢𝗟𝗢 𝗕𝗜𝗔𝗡𝗖𝗢 ‘𝟮𝟯

Creamsicle, almond & orange zest. Blend of Gewürztraminer and Riesling fermented on skins. After fermentation we separated the free run wine from its skins and pressed the skins, we blended half of this press wine back into the free run, to achieve complexity and balance.

𝗩𝗢𝗟𝗢 𝗥𝗢𝗦𝗦𝗢 ‘𝟮𝟮

Raspberry compote, coffee & plum. Blend of Cabernet Franc and Cabernet Sauvignon. This wine was fermented together in tank, 100% de-stemmed fruit. After fermentation this wine was separated from its free run wine and the skins were pressed.

𝗩𝗢𝗟𝗢 𝗥𝗢𝗦𝗔𝗧𝗢 ‘𝟮𝟯

Wild strawberry, cherry & rosemary. This wine is made from 100% Syrah. This Rose is made by “saignée” method. What this means is that we pulled juice from a tank of Syrah that was starting to ferment for red wine production. This process yields its beautiful red hue and complex aromatics.

𝗔𝗕𝗢𝗨𝗧

Based in Rheinhessen, Martin Wörner produces Marto Wines organically on sandstone soils since his first harvest in 2017. Fully invested in organic farming and natural winemaking, his grapes are hand harvested, and his wines, a challenge to the ideas of what German winemaking can be.
His grandfather is known as a pioneer in the region, as one of the first grape growers to sell wines under his own name in the village of Flonheim, rather than selling grapes to local co-operatives. Though his father chose to cultivate fruits rather than wines, the vineyards were maintained until 2015 when Martin took over.

In 2015, Martin worked at Gut Oggau with Eduard and Stephanie Tscheppe and in 2016 at Matassa with Tom Lubbe, some of the natural wine world’s most recognised producers. Applying a mix of both organic and biodynamic farming principles, Martin works approximately 5 hectares of vines, with a focus on soil health and biodiversity. Sheep are used to eat the grasses and no tilling occurs.

Between fermentation and bottling, Martin’s wines live in old barrels, foudres and Mosel casks, where they are ultimately bottled unfiltered, unfined and without any additions or sulphur. Under German law, Martin is unable to put the village on label, so the rock is a nod to Flonheim and its characteristic sandstone.

Kölsch-Style Ale, 5%

Kölsch is traditionally served in a tall, thin glass called a ‘Stange’, which means ‘pole’ in German. We call this beer Polo - which is the Italian word for pole - and is an homage to the crisp, refreshing ales of Köln, Germany. A slight pear and apple fruit aroma is present, thanks to the top-fermenting yeast, followed by a clean, dry and mildly bitter herbal hop finish.

Using the same soft wheat berries used to make Famiglia Baldassarre’s world-class pasta, we brewed Tenero, a delicate golden lager. The beer drinks clean, dry and easy with gently floral and orchard fruit aromas that give way to a relatively full, grain-rich body. Tenero elicits honeysuckle, grass and biscuit, like a sunset stroll through a golden field of wheat.

🍺 This is a special collaboration with our friends over at Famiglia Baldassarre. We will have this on draught at Birreria and Bar Volo. Limited bottles to-go will be available at Bottega Volo & Baldassare’s on Geary Ave!

Pausa was made for those who want to take a breath, appreciate life and enjoy every moment spent with friends and family. A clean, easy drinking lager made using Italian Malt and Slovenian Hops, Pausa is an ode to the Old World pace of life that is often sacrificed in favour of the “Modern Hustle”. We made this beer in collaboration with Tre Mari Bakery, a Toronto institution that has been bringing classic Italian cuisine and an Old World sensibility to the Corso Italia neighborhood (and beyond) since 1960. Also a special thanks to for providing their ultra-clean High Voltage yeast and for the label design

On Saturday, April 20th from 11am-2am Birreria Volo (612 College St.) will be one of the 85 locations in the world to host Zwanze Day, an annual release of a limited one-off lambic beer made by Brasserie Cantillon (Brussels, Belgium). 𝗔𝗕𝗢𝗨𝗧 𝟮𝟬𝟮𝟰 𝗭𝗪𝗔𝗡𝗭𝗘 𝗕𝗘𝗘𝗥

A little over a year ago, we were in Brittany to submerge a few dozen bottles of Gueuze in the sea as a collaboration with Sylvain, an abalone farmer in Finistère. These bottles are still fermenting at a depth of 10 meters in the company of his charming creatures.  Once a month, Sylvain brings up the cages to add various types of algae for the mollusks to feed on. We tasted these same algae in tartare during our visit, and the idea came to us to try them in maceration with Lambic to create a partnership between the brewery and Sylvain’s company. After several attempts, it turned out that seaweed, specifically the sea lettuce, gave the best result. This vintage exudes aromas of exotic fruits; it has notes of iodine with a slight salinity reminiscent of oysters.
