Anzac Day may have passed but these cookies are still on the menu for now!

The Anzac biscuit is a cookie which is popular in Australia and New Zealand, made using oats, flour, sugar, vegan butter, golden syrup, and coconut. Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I.

It has been claimed that these biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.

B Corps are all about giving back and engaging their communities. As it's B Corp month and we are a B Corp certified business, we decided to give a generous donation to a local animal cause and let our local Whistler Vegans community vote on their favourite.

The votes are in and it was a clear majority (67%) in favour of WAG (Whistler Animals Galore) - the shelter for cats and dogs at Nester's.

Thanks so much for taking time to reflect on the animals who need us to stand up for them and support them in this sometimes cruel world.
We appreciate all your support at our bakery cafe too, which enables us to give back 1% of our revenue, $22,728.91 to date!

Our friends have shared this delicious festive recipe from our upcoming cookbook "BReD" just in time for Thanksgiving!

Taking inspiration from the British Treacle Tart, which is made with Lyle’s golden syrup and breadcrumbs, this dessert incorporates molasses, maple syrup and golden syrup as well as sourdough breadcrumbs in the filling. We love using 100% rye crumbs for extra malty and earthy flavours.

Our story began when Ed and Natasha realized that the world didn’t need yet another bakery contributing to animal suffering through masses of eggs and dairy ingredients and causing unnecessary pesticides to be sprayed on conventional (non-organic) wheat, sugar and other crops.

Instead, what was needed was a new type of business. One that went above and beyond to balance making a profit with being a force for good for the planet and its people. One that
proudly displayed its values and purpose not just to its clients and customers, but to the entire world.

That’s when BReD was founded and why we joined the B Corp movement.

For us, Certification has always been more than a mark. It’s a badge we wear proudly to remind us why and how .

Our Story

Originally from Kent in the UK, Ed has always worked in fine dining kitchens around the world and has been making sourdough since 2008. Ed and Natasha moved to Canada in 2013 to snowboard for a season. They both worked in hospitality and Ed worked in farm-to-table restaurant Alta Bistro in Whistler, BC.

While taking some shoulder-season leave and working on Vancouver Island farms in the summer of 2014, Ed started a sourdough culture that he took with him back to Alta Bistro and implemented a bread programme for the restaurant.

Back in 2016, Ed rented the bistro’s kitchen once a week to make bread for his friends, who subsequently told their friends, and before long demand had increased to a point where Ed had outgrown the equipment. That’s when Ed and his wife, Natasha, decided to team up and start planning to open an 100% plant-based organic sourdough bread shop in Creekside, Whistler. Natasha admired Ed’s dedication to making tasty artisan loaves and Ed knew that Natasha’s background as an English teacher and examiner, as well as a string of hospitality jobs over the years would come in useful for starting a food and beverage business.

Being vegan for the past five years, it was important for Ed and Natasha to bring that into their business. They both believe that you shouldn’t make food for other people that you wouldn’t eat yourself.
