The 80th anniversary edition of RC Show takes place April 7-10 in Toronto. It will showcase a selection of classic competitions and exciting new events, including latte art, breakfast sandwich and pastry competitions.
Restaurants Canada’s series of competitions offers contestants the chance to share their potential, inspire people, and feed their passion (and judges!) at RC Show. The heart of the show is the goal of helping fuel success through advocacy, connection and support to create vibrant and thriving restaurant and food service communities across Canada. Expanding and connecting the culinary community, and bar and coffee talent is at the forefront of what each competition sets out to do. Assertiveness, access and a new approach were just a few of the tools past competitors say they’ve gained through these career-making experiences.

New leadership for World Worldchefs - World Association of Chefs Societies
The October federation event took us to the fantastic facility of the Manitoba Cooperative Honey Producers Ltd & Bee Maid Honey Ltd. Chef members, students and guests were all treated to an intimate tour of the facility, and had the opportunity to hear from both Bee Maid and Farmery Brewery.
Bee Maid and their Manitoba, Saskachewan and Alberta honey producers bring their natural product to this plant and her sister facility in Spruce Grove Alberta to turn 10 million pounds of raw honey into honey products sold in 230 gram to 1300 kilogram containers.
The honey is also making waves in the beverage sector with its collaboration with Farmery Breweries. Guests were able to sample the wonder-full honey flavor of its Aunt Bea's new alcoholic and non alcoholic teas.
International Chefs Day was celebrated in Winnipeg as Bee Maid Honey and the Culinary Federation presented the Honey Harvest Challenge. Four junior culinary teams presented their savory and sweet canapés for a group of over sixty chef members and guests.
The field consisted of teams from Dauphin Regional Secondary School with instructor Chis Rylan, Winnipeg Technical Vocational High School with instructor Livia Gloux Fisette, and two teams from Red River College with instructors Mandy Wingert, Kristen Chemerika-Lew and Karl Oman.
Those in attendance were given a chance to vote on their favorites with the winning team hailing from Tech Voc in Winnipeg with their Hot Honey Fried Chicken and Waffles and Honey Ice Cream with Fermented Cranberry sauce and Honey Toffee Crumb in a handmade waffle cone.

At the September meeting we had a chance to look back down the road of culinary excellence with the presentation of the Canadian Culinary Federation Honor Society Membership to Chef Raymond Czayka. Chef Raymond has met the extensive criteria required for membership and was accepted to this level of culinary excellence at the last convention. Raymond shared some of the highlights of his thirty year long career and offered encouragement to the working chefs in attendance.
Honor Society Member John Reimers and President Peter Ecker presented the certificate of membership on behalf of the Federation.
The Culinary Federation Winnipeg had their first fall meeting at South Beach Casino on Wednesday, September 11th. Hosted by Chef Garren Kumps, the Icelandic and Ukranian Chefs served a fantastic array of traditional dish’s representing their ethnic roots.
Cabbage rolls, perogies, pickled herring , Beet Salad, Potato pancakes, and Rosemary Chicken gave us the best tastes of Ukraine. While on the Icelandic side we feasted on Rullapilsa, Pönnukökur / Pancakes, and suberb Vínarterta. The centre piece of the buffet was a towering mixed grill featuring luscious Lamb Chops.
Join us at the 2024 Taste Canada Cooks the Books student cooking competition presented by Canadian Beef!
On October 20th at Cirillo’s Academy you can watch student chefs from across the country battle it out with recipes showcasing 'Global Flavours Grow in Canada.'
All recipes will include a cut of AAA Canadian Beef as centre-of-plate and an assortment of Lactalis Canada Foodservice dairy products. Recipes will call for at least 60% of ingredients that are grown, produced and/or raised in Canada. The students are invited to use the What’s in Season section of the Canadian Food Focus website as their helpful resource.
They will also incorporate a handful of California Prunes - Canada and California Walnuts, and a variety of Club House For Chefs herbs and spices.
The student chefs will prepare their dishes, start-to-finish, live in front of the crowd while being scored by two Culinary Federation gold medal winning chefs. Then, competitors will present their dishes to the judges panel for tasting.
The winning team will be crowned at the Taste Canada Awards Soirée on October 21st at the iconic Fairmont Royal York in Toronto and take home a $3,000 bursary, amazing kitchen swag, and the title of Taste Canada’s Best New Student Chefs!
