One of the most classic dippers in Cheese Fondue – cubed pieces of bread.
In the Fondue House Dupont we bring classic Luzerner Weggen Bread - the dark, mildly sour bread consists of whole flour with a proportion of natural sourdough.

But, in our restaurant all cheese fondue comes not only with bread, also we bring small boiled potato.

This two classic additional dishes help you enjoy cheese fondue and experience its different sides.

For Chinoise Fondue we serve thinly sliced strips of high quality beef and chicken. It served raw to be cooked in the broth.

Don't forget after to dip them in delicious homemade sauces, without which it is difficult to imagine such a dish as Chinoise Fondue.

Is there lactose in raclette cheese or fondue?

Lactose intolerant people should not be afraid to eat our Fondue or Raclette.

Hard Swiss cheeses including Gruyère and Alp-Cheese don’t contain any lactose, since it’s broken down in the production process. Others, like Raclette, can contain low levels and are well tolerated by some lactose-intolerant people. One cheese containing less than 0.1gr of lactose per 100gr is considered lactose-free.

During the manufacturing process of cheese, the lactose separates from the proteins and fats of the curd. The bacteria used in the ripening process break down most of the remaining lactose within the first 24 hours.

This is why mature cheese is well tolerated.

„Digging into a fondue may seem clichéd, but this quintessential Swiss dish has an epic, if ambiguous, history. Its first mention dates as far back as Homer’s Iliad from around 800 to 725 BC, where it was described as a mixture of goat’s cheese, wine and flour. In the late 17th Century, a Swiss cookbook, Kochbuch der Anna Margaretha Gessner, makes note of cooking cheese with wine. Others say peasants in the Swiss mountains created the dish as a way to make use of leftover bread and cheese during colder months when fresh produce was scarce. But modern fondue – melted cheese and wine set in a pot over an open flame – dates to the late 1800s, with roots in the French Rhône-Alpes region near the Geneva border. Fast forward to 1930 when the Swiss Cheese Union declared it the country’s national dish – and the Swiss have not looked back since.“

Well, anyway we also can’t image fondue without good peace of bread and potatoes, as it was long time pho. But with one difference - in our restaurant it’s all fresh, as quality of product it’s our priority.
