Mit großer Freude teile ich mit, dass ich nach meiner kürzlichen Elternzeit zurück zu meiner Leidenschaft - der Ernährungsberatung - gefunden habe. Ich bin gespannt darauf, meine Praxis hier in der Nähe von Hamburg wieder zu etablieren!

Herzlich willkommen in der neuen Heimat meiner Praxis Lemcare. Packed with wholesome ingredients and a tangy dressing, this salad is a perfect balance of earthy beets, peppery arugula, creamy feta, and crunchy walnuts. Let's dive into the recipe and discover how to create this colourful and delicious dish.

⏰ 10 minutes

Ingredients:
500g Beetroot
100g Arugula
150g Feta
100g Walnuts
3 tbsp Balsamic Vinegar
1 tbspLemon Vinegar
1 tbsp Raspberry Vinegar
1 tbsp Maple Syrup
2 tbsp Olive Oil
Salt & Pepper

Method
1. Cut beetroot into small pieces. Place into a salad bowl with rucola.
2. Chop walnuts. Place into the bowl.
3. Make the dressing. Add in the balsimic vinegar, lemon vinegar, raspberry vinegar, maple syrup, olive oil, salt and pepper into a small bowl. Stir together until combined. Season depending on personal preference.
4. Drizzle dressing over the salad and serve. Enjoy!

Creamy Broccoli Pasta 🥦

A super simple, healthy pasta dish that everyone will love ❤️

👫Serves: 4 adults
⏰Time: 10 min prep + 20 min cooking

Ingredients:
400g Pasta
1 Brown Onion, diced
3 cloves Garlic, crushed
1 Broccoli Head, chopped into small pieces
200g Peas
200g Spinach, defrosted
150ml Vegetable Stock
200ml Oat Cream
1/2 Lemon, squeezed
Parmesan Cheese, grated (omit if vegan)
Salt & Pepper
2 tbsp Basil
1 tbsp Olive Oil

Method:
1. Bring a pot of water to boil.
2. In a deep pan heat olive oil on a medium heat.
3. Add in the onion and garlic. Allow to simmer until translucent.
4. Add in broccoli, peas and spinach. Season with salt, pepper and basil. Allow to cook for 3-4 minutes.
5. Add in the vegetable stock and oat cream. Bring to a slight simmer. Cook for about 10 minutes.
6. In the meantime, place pasta into boiling water and cook according to packet instructions.
7. Once pasta is cooked, drain and place into the creamy vegetable sauce.
8. Add in lemon juice, taste and season according to preference.
9. Serve with a sprinkle of parmesan and enjoy!

Lentil & Vegetable Lasagne is a hearty, tomatoey, cheesy meal that is simple to create and enjoyed by everyone. The combination of soft lentils with a rich tomato sauce and creamy ricotta cheese will have you asking for a second serving. Which is totally ok, since there are so many vegetables jam packed into this dish. But I promise even those picky eaters won't be able to tell.

Ingredients (serves 6):
1 Onion, diced
3 cloves Garlic, minced
1 Carrot, grated
1 Zucchini, grated
200g Mushrooms, grated
800g Diced Tomatoes
1 cup Vegetable Stock
1 cup Lentils, brown, green or red
1 Eggplant
200g Baby Spinach Leaves
6 Lasagne Sheets
1 tub Ricotta Cheese
100g Cheese, grated

They are the most perfect sandwich, jam-filled cookies that are easily enjoyed at the festive season. Easy to make and fun to create with different shapes and flavours of filling.

250g Butter, softened
1 cup Icing Sugar
2 tsp Vanilla Bean Paste
2 3/4 cups Plain Flour
1/2 cup Jam, seedless- raspberry or strawberry is typical

A traditional Greek dish of rice filled vegetables served with fresh creamy feta and a side of potatoes. This dish is perfect for all year round whether it's a cold winter evening or a stinking hot summer day. Plus it's jam packed with a variety of vegetables, healthy grains and good fats 😀

Ingredients (Serves 6):
8 large Vegetables (3 grape vine tomatoes, 2 red capsicums, 2 yellow capsicums, 1 eggplant)

1 Onion, chopped
1 Carrot, grated
