Another Monday is gone! Plus, it has been a nice, sunny and warm day.. that's more than enough for a small celebration of a beautiful day!

Ok, so... Let's take the asparagus and cook them directly in the pan after removing the hard part and the fibrous end with the peeler.

We are going to make them glazed and tasty with a little butter, a pinch of salt and sugar. Easy, right ?

It takes 6 or 7 Min cooking so it's something you can do any single day and remember... You deserve it!

At the same time let's make a simple pesto using cashews and peppermint, olive oil .. and be generous with the parmigiano!
A cube of ice always helps to keep the color bright

Put everything on the plate having fun decorating with pesto, some cashews and add a hint of color ... a beautiful and delicious dish to celebrate a beautiful day

It has been a few springs since I took on a plane bound for Oaxaca, Mexico.
A decision made without a brain. Rather, I would say I followed a hunch.

There were no great reasons to choose Mexico; it was just another country. And there were certainly no reasons to get to Oaxaca, in fact if you search for a plane to Mexico you will see that almost all of them arrive in Cancun, on the opposite side.
The last leg was in a very small and funny plane, and I still give thanks that we landed safely.

The trip was meant to last 4 months, and nothing was planned. Really nothing. All I had with me was a trolley with very little in it.

Instead, in the end, the adventure lasted 9 months between Mexico, Cuba and Canada.
Between swimming in two different oceans, Mayan pyramids, nights of partying, grilling on the beach with coconuts everywhere, a family that was building an eco-friendly house, and memories becoming stories to tell.
Taking the little things seriously and not giving importance to what is very important.

A choice made mindlessly and still probably the best choice ever made.

Welcome to the land of tango, where the local culture has now for many generations approached with the Italian culture 🇦🇷🤝🇮🇹

A country where when you sit down to a meal you will be spoiled for choice: asados, pizzas, sopa criolla, alfajores y dulce de leche... And also.... Empanadas!!!

And it is precisely from these that we wanted to start, for a lunch with friends whose aroma will exalt us and we will be happy in biting into these empanadas so crispy, flavorful, genuinely fantastic and easy to make!

And how do you prefer them. Baked or fried ?

L'altra sera avevo voglia di togliermi lo sfizio, quello vero. E che c'è di più sfizioso di una carbonara fatta come si deve ?

Dice " ma la carbonara di sera? Si, se ceni presto e ti limiti a una porzione da 70g invece delle solite 3, se pó fá. Fídate.
Una volta tanto, si può.

Con uno spaghetto di Gragnano, di qualità e bello carico di amido che ci aiuta a trovare la giusta cremosità nel piatto, i tuorli d'uovo ( scelgo quelle con la dicitura "allevate all'aperto" oppure biologiche. Quelle con scritto"allevate a terra" sono un po'ingannevoli), il guanciale da fare croccante in padella e il pecorino buccia nera. In più visto che ci sono la facciamo ancora più gustosa con qualche carciofino del campo, che diventeranno anche loro dorati e croccanti... Basta davvero poco per fare un primo "da paura"!!

E ora... Siediti comodo e mágnate 'sta carbonara!!

Die Eltern von Santino und Valentìn baten mich, einen lustigen Kurs mit ihren Kindern zu machen, die es lieben, selbst Hand anzulegen... nichts könnte einfacher sein, das sind meine Lieblingswünsche! 👩❤️👨🧑🍳🍝

✔️Und los geht's... Mehl abwiegen, kräftig kneten und viel Spaß beim Ausrollen des Teigs mit der Nudelmaschine. Und dann die Soßen: Wir wollen sehen, wie man eine einfache, gesunde und schmackhafte Pesto-Soße aus Keimlingen herstellt.
Und dann eine Tomatensoße mit Gemüse drin, die aber auch den Kleinen schmeckt.🍝🍅🍾🌱

Die Portionen waren sehr großzügig... die Pasta war so groß, dass sogar die Nachbarn ihren Anteil bekamen!
Die kleinen Köche hatten Spaß und lernten die Kochvorbereitungen kennen, Mama und Papa hatten ein paar Stunden Ruhe und ich hatte viel Spaß... ein tolles Ergebnis! 🔥🍄🥦🍜🥘
