Grapes for the Kolonne/Null assortment are grown in some of Europe’s most interesting regions in collaboration with top producers like @alois.lageder , @weingut.fuerst.loewenstein and @weingutgrafneipperg . Once harvested, the grapes are traditionally pressed and the grape must is allowed to undergo fermentation - a process which not only creates alcohol, but also changes and enhances the aromatic complexity, structure and body of the wine. When the juice has fermented to the winemaker’s desired style (dry, off-dry, etc.), the accumulated alcohol is gently removed using a heating process called vacuum distillation at a maximum temperature of 30°C. The key is to remove as few aromatic and structural components as possible, in order to preserve the varietal characteristics of your favourite wine grapes. Want to taste?
