During Prohibition, brewers began exploring ways to make beer without alcohol, leading to today's innovative methods. One popular technique is 'interrupted fermentation', where brewers carefully monitor and stop the fermentation process before alcohol can form, preserving the beer's natural flavors. Another method is 'reverse osmosis', a high-tech process where brewed beer is filtered at a molecular level to remove alcohol while retaining the essential taste profiles. These techniques allow for a wide range of non-alcoholic beer styles, from refreshing lagers to robust stouts, all offering the authentic beer experience minus the alcohol.

Next up in our is the highly debated sour brews.

Sour beers are a delightful departure from the norm in the world of brewing. With origins that can be traced back centuries, these beers are distinct for their intentionally tart and acidic flavors. These brews take a detour from the traditional brewing process by intentionally introducing wild yeast strains and bacteria. This unique brewing process results in a wide spectrum of sour beer styles, including Berliner Weisse, Gose, Lambic, and American Wild Ales. Sour beers offer a refreshing and tangy alternative to traditional beer styles, with flavors ranging from citrusy and fruity to funky and complex. Embracing the sour side of brewing is an adventure for the taste buds that keep evolving.
