The Pasilla Mixe chili is native to the Eastern part of the Sierra Norte region of Oaxaca, Mexico. It is grown in the rugged mountains of the Sierra Mixe region at an altitude of around 2000 meters above sea level and higher. The smoky Pasilla Mixe chili is also the sole botanical and the primary source of all the complexity in Ayuuk.

1 ⅔oz / 5cl Ayuuk
Ginger beer
Juice of ½ lime
Lime wheel for garnish
METHOD
Pour Ayuuk and lime juice ín your highball.
Add ice and top up with grapefruit soda.
Gently stir as garnish with a lime wheel.

The coolest part, and the one that makes the most sense to us at Empirical, is that smell is the only sense that is directly linked to the part of the brain (hypothalamus) that controls our moods, and emotions, and where our memories are processed. Basically, it hits us right in the feels.

2/3 oz / 2cl cl lemon Juice
3 1/3 oz / 10cl tomato Juice
Pinch of Pepper
Pinch of Salt / Sal de Gusano
3 dashes of Worchester sauce
2 dashes of Tabasco
Celery branch for garnish and snacking
METHOD
Add all ingredients in your glass and stir over ice.
Garnish with a celery branch.
We don’t think we’ve ever met someone who’s indulged in an espresso martini and didn’t enjoy it. We’ve sure seen it pop up more and more on menus in the past few years, and we are down for it.

½ oz / 1.5cl orgeat syrup
1 oz / 3cl espresso or strong filter coffee
½ oz / 1.5cl coffee liqueur

METHOD
Add all ingredients in your shaker over ice.
Hard shake and strain in your Martini or Nick & Nora glass.

2 oz / 6cl Ayuuk
⅕ oz / 0.5cl agave syrup
2 dashes Xocolatl Mole bitters
Orange peel for garnish
METHOD
Add all your ingredients in your mixing glass with ice.
Stir until sufficiently chilled and diluted.
Strain into your lowball over ice.
Garnish with an orange peel after expressing its oils.

0.2 oz / 0.6cl Tawny Port
5 oz /15cl Coffee
1 bar spoon of sugar (Approximately 1/2 teaspoon)
Cream float on top*
Method:
Add sugar, Port and The Plum, I Suppose to your preferred Irish coffee cup.
Brew a batch of your favorite coffee and pour it into the glass. Stir.
Partially whisk your cream so it stiffens enough to float on top of the drink.
Gently float the cream on the drink.
Enjoy.

Distillation is a breakdown of sorts, a method that allows liquid mixtures to separate into their components.
Used for ritual purposes across the globe, its purpose shifted to medicinal use in the late 13th century in the form of Water of Life or Aqua Vitae in Latin. And from what could frankly be called poor-quality distillates, technological advancements, and better raw ingredients led us to the spirits we now drink and the categories they fall under. Yet the techniques have remained the same throughout the ages.
This led to some questions when we started Empirical:
