Harvest season is approaching!

Nestled in the heart of the Toro region in El Pego, our ancient vineyards benefit from the unique climate and high-altitude conditions that allow our Tinta de Toro grapes to ripen slowly, developing deep, rich flavours.

Our later harvest season is not just a tradition—it's a choice. By letting our grapes hang on the vine a little longer, we ensure that each one reaches perfect ripeness, bringing you a wine with robust tannins, vibrant acidity, and complexity that tells the story of time and tradition.

Hello from our winery!
Built by Zamora’s own Francisco Somoza. Estudio de arquitectura, our architectural ensemble is not integrated with the landscape, but coexists with it. Consisting of several overlapping red walls, much like the red soil in Toro, they represent the ancient walls that used to encircle its old towns.

"The winery is an unopened treasure chest, supporting the idea of wine as an elixir that must be given a beautiful cover."

Dive deep into the ancient soils of Toro…

Our vineyards, at the heart of El Pego, are part of D.O Toro’s southernmost and highest village… almost 800 meters above sea level! They are known as having some of the region's best and most resilient terroir for its combination of location, climate and types of soil.

Soil is one of the most essential factors to winemaking, and we are proud to lay our roots in the exceptional sandy and rocky soils that date back to the pre-phylloxera era.

Las Parvas is made from a single vineyard that dates back to the pre-phylloxera period, over 140 years and was first planted in 1880. At an altitude of 780 metres, the ancient vines are west facing and rooted in a sandy loam, with gravel and rocks deep below. These alluvial soils allow for proper drainage and impart minerality, as well as lower pH levels.

A particular emphasis is taken during harvest, where handpicked grapes are kept temperature controlled prior to destemming at 4°C. Manual temperature control is maintained during fermentation to ensure it does not exceed the necessary values in order to preserve the characteristics of the grapes. Facilities specific to Las Parvas include a single stainless steel tank with a standard lid and temperature control through cooling jackets, followed by 16 new French oak barrels of 225 litres where wine is aged for 24 months. The character, personality and tradition of Toro is carefully preserved in each bottle, while demonstrating balance and restrained elegance.

The lifecycle of Tinta de Toro grapes as it unfolds is a beautiful event.

After vines go through their dormancy phase and winter pruning, buds begin to break in April or May and continue to grow into spring flowering.

In early summer, those clusters of spring flowers develop into a fruit set, and eventually véraison begins… throughout July to September, the grapes will go through a colour change: from vegetal green, to a soft pink, burgundy, and eventually to their signature shade of the darkest of dark purple (inside and out!). They ripen, swell, and sweeten, and are ready for harvest!

Explore the origins of our vineyard and its ancient vines ⬇️

The wines from Toro are brimming with tradition. Their origins date back to before the Romans settlements. In the Middle Ages they were highly regarded and enjoyed by royals which allowed them to be sold in towns and cities where the sale of wines was otherwise forbidden.

These wines were drunk by kings in the Middle Ages and were the first to be shipped to America with Columbus during the 19th century. Large quantities were also exported to France in order to replenish their wine shortage due to the Phylloxera plague.

We can proudly say our vineyards are amongst the oldest in Spain, with several being over 140 years old.

Located in El Pego, the vineyards are part of D.O Toro’s southernmost and highest village, almost 800 metres above sea level. They are known as having some of the region’s best and most resilient terroir for its combination of location, climate and types of soil.

Our oldest plot has vines first planted as early as 1880. The climate in this area is harsh, and these vines need to be well-adapted to the sandy and rocky soil and extreme climates in order to survive. Thanks to their strength, these vines had persevered through the Phylloxera plague.
