Introducing Executive Chef Paolo Cortinovis.

From a young age, Paolo’s culinary journey was nurtured in his Grandmother's kitchen in Italy, where he discovered his passion for cooking. Her guidance and encouragement became his aspiration to become a chef.

Paolo’s career began under the guidance of the renowned 3 Michelin star chef, Massimiliano Alajmo, and most recently, he worked at Aska in New York, a 2 Michelin star restaurant.

Now, we are delighted to welcome him to Amalur.

Paolo enjoys forging strong relationships with suppliers and strives to use local, island-grown ingredients, working hand in hand with dedicated farmers.

His personal touch and philosophy in developing taste experiences with the finest local ingredients results in dishes that are nothing short of extraordinary.
