Remember the passion fruits I had from the garden? Well…. Had this flavour combo rattling around my head for weeks… Mocha Maracuya - think caramel latte, dark chocolate and passion fruit.
This is a gluten free cacao base,
Gluten free gooey dark choc bottom layer, passion fruit curd and Mocha whipped ganache… as in all my recipes I like to use brown sugars and local honey! Not bad for a three dayer! Developing seasonal recipes for events next year slowly and carefully to not affect my histamine intolerance too much.. Also you guys can make at home, I have no equipment here and made this in a paella pan and then used the fruit shells for moulds.

Os acordáis de las Maracuya’s de mi invernadero? Pues tuve este combo de sabores en mi cabeza para unas semanas.. piensa en cafe con leche al caramelo con chocolate negro y gelée de maracuya.. es sin gluten, y con azucares no refinadas y miel.
Esas creaciones aunque me afectan con la histamina tienen que salir de mi cabezaaaaa! AY!
Esto lo hice en una cocina normal en una paellera y usé las cascaras de las maracuyas como moldes… podéis replicar algo parecido en casa fácilmente!

Had to share this because I think its beautiful… although I have and will be low key for healing for as long as it takes, maybe some vibrant Maracuya’s from the poly tunnel will also bring a smile and a sparkle to your eyes. These will be getting made into a puree and frozen for when Im up for baking.

¡Creo que debería convertirme en un embajador de la histamina! ¡Compartiendo con otros que se sienten confundidos porque no se pueden reconocer sus síntomas! Si tienes problemas con el síndrome de la vejiga dolorosa, tal vez valga la pena pensar en la histamina... y también hay un gran suplemento que normalmente tomo a diario (por casualidad, no lo había tomado tanto recientemente, porque estas cosas son caras) llamado quercetina...he dejado un poco de información incluido, pero esta en Ingles.

Cuando te sientes como una loca y has estado enferma con dolores de riñón y vejiga, sin energía y con la piel cayendose durante un mes y medio y pagas 800 € para ir a especialistas privado y te dicen que no hay nada y que tomas un un montón de pastillas que no son apropiadas porque nunca antes habían oído hablar de la intolerancia a la histamina... I must say this last month has been eventful health wise… I have become so sensitive my skin was burning off anytime it came into contact with any kind of synthetics or toxins until I passed out and got taken down and into A&E with bladder & kidney issues… and so Im out for healing for while…. Yesterday I was invited to a birthday party at a beautiful rural farm hotel in the south of Portugal Quinta do Chocalhinho] and a chocolate cake was requested… throwing out my usual straight lines style! And going for full on rustic Matilda film style chocolate monster cake! Four layers of fudgey wholemeal sponge, one layer of darl chocolate ganache, two layers of whipped milks chocolate ganache and one layer of sea salted choco butter cream.. a messy affair! Dirty fingers and chocolatey mouths all around!

Ayer me invitaron a una fiesta de cumpleaños en un precioso hotel rural en el sur de Portugal que se llama Quinta do Chocalhinho] y me pidieron una tarta de chocolate… ¡desechando mi habitual estilo de líneas rectas! ¡Y a por el pastel monstruoso de chocolate al estilo rústico de la película Matilda! Cuatro capas de bizcocho integral, una capa de ganache de chocolate negro, dos capas de ganache montada de chocolate con leche y una capa de crema de mantequilla de chocolate con sal marina.. con Dedos sucios y bigotes de chocolate por todas partes!

While exploring caves, Not hard to make at all and good for feeding your microbiome… I can have little bits as obviously I am histamine intolerant and this is full on fermented… but, with balance and not being too restrictive you can ward off those bingey behaviours and allow yourself a little morsel of what you love 🤩

Semana de carbohidratos, no es difícil de hacer, es mas sano que lo que encuentras en el super.. alimenta tu microbiomo y te da energía para el día. Perfecto para días de deporte. Yo solo como poquito porque lleva un nivel alto de histamina.. pero con equilibrio y no siendo tan restrictiva puedes llegar a comer lo que a ti te gusta sin abusar.

Estoy segura que he dicho esto antes, pero... la naturaleza también alimenta tu mente y tu cuerpo, pueden trabajar juntos o uno contra el otro... al hacer cosas que te ayudan a desconectar, armonizas esa conexión entre el cuerpo y la mente.

Ended up playing hide and fetch the potato with the dogs..(my version of teaching the dogs to truffle hunt!) so that they were digging them up for me in the end. Also the shade of the wheelbarrow and the cool earth were too inviting to us all.
