Something to definitely try when you're out and about and probably one of the most coveted and delicious things if you're a seafood lover.
These carabineros (or scarlet shrimp in English) are giant shrimp caught from very deep in the Eastern Atlantic.
Renowned for their red colour even when raw, meaty texture and robust flavour, they are revered by chefs on the iberian peninsula.
However, they are not cheap, so perhaps only a treat now and then!!!

They said "order us something that you really like, that's traditionally Spanish", so I did. And they loved it !!!
Cochinillo or roast suckling pig originates from Segovia, just north of Madrid and dates back to the Roman's invasion of Spain.
Very slowly cooked using nothing more than water and salt it is melt-in-the-mouth delicious and perfect for sharing. A true interpretation of Spanish food culture!
May not be to everyone's taste but if you try it, you're in for a treat.

Somethings on the Costa Del Sol are emblematic of the region and just don't need to be messed with; and this is most definitely one of those !
By far Malaga's most famous and celebrated dish, Fritura Malagueña is quite simply smaller seafood and fish, (including, but not limited to, baby squid, salmonete (red mullet), mackerel, prawns, cuttlefish, small hake and anchovies), rolled in flour and fried in extra virgin olive oil until crispy and golden.
The smaller varieties are used because there is no need to worry about any bones.
As they say, if it isn't broken, don't fix it.........

Sometimes traditions are there for a reason, and that is so true of Spanish food.
A staple diet of millions of Spanish for thousands of years, rabbit is still a popular dish for many, and with nearly 4000 rabbit farms plus wild hunting, this protein rich meat is everywhere.
It makes a great tapas dish and here is a sharing plate of braised rabbit with classic Andalucian salmorejo.

Now we're in seriously classic tapas territory.
The gilda, a traditional Basque country pintxo (although it has now grabbed a foothold in Andalucia), was first served in the 1940's in San Sebastian.
It is simply a Guindilla pepper, a green olive, and an anchovy.
Given the ingredients are cured, pickled, and brined, the pintxo is heavy on the salt, making it the perfect accompaniment to vermouth, aperitifs, classic cocktails or most appealing in our area, a glass of dry Malaga moscatel.
Dangerously tasty!!!
Something a little unusual, uniquely Spanish, originating from Andalucia and an absolute firm favourite on our Wine & Tapas Tours, 'Berenjenos Con Miel'.
Deep fried aubergines drizzled with honey or Miel de Caña (literally “Honey of Sugar,”), but really it’s a kind of molasses. So, calling the dish Fried Aubergine with Honey is a bit of a misnomer since the “Honey” is actually sugar syrup.
Both ingredients introduced, yet again, by the Moors, have been on Spanish plates for more than a thousand years.
And in Andalucia you’ll see them in virtually every tapas bar.

Now here's one for you adventurous foodies !
Angulas, or baby eels are a revered delicacy in northern Spain, but their appeal has spread nationwide.
These little things are traditionally sautéed in clay pots with olive oil, garlic and cayenne.
Originally, so cheap and plentiful, today things are very different, as they are now quite rare and hard to find, the fresh ones commanding over 1000€ per kilo.
But so much loved by the Spanish, they have found a way around it to satisfy their cravings and now you can find “fake” angulas in the supermarket.
They are called Gulas, taste pretty much the same as they are made out of surimi fish paste, and look almost identical but at a small fraction of the price.
And now available in virtually every supermarket nationwide.

Now popular in Andalucia, this is actually Steak Asturias originating in Northern Spain.
The beef is marinated unusually in white wine and served with the king of Spanish blue cheese, Cabrales.

Rabo de Toro or braised Oxtail stew is one of Spain’s most popular dishes and found in most restaurants and tapas bars.
Traditionally created and served after the bullfights, and dating back to Roman times, it is an Andalusian creation, allegedly inspired in Córdoba but now spread throughout the rest of Spain.
The bull’s tail, albeit it bony and tough, is slowly cooked in wine, stock and spices until it falls off the bone and is melt-in-the-mouth tender.
Simply delicious and eaten either as a tapa or a main course.
