The aromas reveal themselves in finesse, with notes of red fruits (strawberry, raspberry compote) and spices (black pepper, cinnamon and fresh mint) typical of Syrah.

The recommended aeration time is 4 hours. This aeration allowed the wine to open up and reveal all its potential and all the dimension of its taste profile as soon as the bottle was opened.

The wine is balanced, with a nice length in the mouth, and will perfectly match a nice piece of meat.

The harvest ! How do we determine the exact date of the harvest ? 🍇

The grape harvest is carried out when the berries are perfectly ripe.

However, there are some indicators to take into account to determine the ideal time to start harvesting. Acidity and sugar concentration are measured in order to choose the right moment.

Using a refractometer, we can check the amount of sugar present in the grape berries by putting a few drops of fresh grape juice on them.
