A lovely courgette soup which is high in fibre and low in fat. If you're missing the crunch of croutons, I like to fry chickpeas in a pan with a tiny bit of oil in a non-stick pan until I hear them pop!
I'm always looking for food inspiration and I found it at this market. It's hard to find ways of making use of 'super foods' in tasty dishes, but the Spanish are masters at it with their salads. A big hit with the entire family!

An accidental food discovery! I ran out of avocado for the fruit and vegetables portion, so I used the mango in the fridge. A lovely taste with a healthy twist to a classic dish of chili con carne.

I've gone to the dark side! Paella with squid ink will bring a wow factor. It doesn't make a nutritional difference, but it seems to work on fussy kids who want to try something cool (and can't be convinced about how good paella is for them 🤣)
Home-cooked paella while on holiday. Lots of local marine produce, 30 minutes to cook and 100 Euros cheaper than the local restaurants! Yummy

Family meal tonight with great local ingredients. A new discovery is manchego with truffle from Emi & Carles on the Gran Via. Wow! If you have all of the flavours through the amazing produce, you don't need any unhealthy dressings!

Friday night was kebab night! A big mixture of flavours and textures including marinated raw cabbage with healthy homemade sauces. Ladies, let me know if you'd like the recipe 😘

Portion size is key here- if you're going to overload with something, do it with vegetables. Here, I've added shredded cabbage marinaded in lemon for a bit of crunchy, vitamin-filled zest.

I have built a gym to create a private and truly exclusive setting where there’s no need to wait your turn to use old equipment or have prying and judging eyes on you! This mattered to me as I’m a mother of two who couldn't face gyms, especially after giving birth.
Bring your babies as there is a safe play area for the little ones, and you can keep an eye on them throughout.
