It seems like flu season is upon us again 😷🤧.. Boost your immune system and fight off colds this season with these 10 natural potions! 🍵✨

Autumn Lamb Stew
INGREDIENTS
•2 tablespoons vegetable oil, divided
• 450g boneless lamb or mutton, cut into 5cm chunks
• 900g waxy potatoes, peeled and quartered
• 150g coarsely chopped carrots
• 150g coarsely chopped onion
• 150g thinly sliced leeks
• 2 tablespoons plain flour
• 700ml beef stock
• 1 can of Guinness (optional)
• Fine salt, to taste
• Freshly ground black pepper, to taste
METHOD

1. Gather the ingredients. Position a rack in the centre of the oven and preheat to 180°C (160°C fan/gas mark 4).
2. In a large frying pan, heat 1 tablespoon of vegetable oil over medium-high heat until hot but not smoking. Add half of the 450g boneless lamb or mutton pieces and brown them all over.
3. Remove the browned lamb pieces with tongs and place them in a large ovenproof casserole dish or other heavy-duty oven-safe pot.
4. Cover with half of the 900g waxy potato quarters, half of the 150g coarsely chopped carrots, half of the 150g coarsely chopped onion, and half of the 150g thinly sliced leeks.
5. Add the remaining 1 tablespoon of vegetable oil to the frying pan on medium-high heat. Brown the remaining lamb as before, and add to the casserole dish.
6. Cover with the remaining potatoes, onions, leeks, and carrots.
7. Add 2 tablespoons plain flour to the still-hot frying pan and stir well to soak up any fat and juices. Cook over low heat for 3 minutes.
8. Gradually add 700ml beef stock, one ladle at a time, mixing until you have a thick, lump-free sauce. Add the Guinness and only half of the stock if you are using this.
9. Pour the sauce over the lamb and vegetable mixture in the casserole dish.
10. Add any remaining stock, cover with a tight-fitting lid, and transfer to the oven. Let it cook undisturbed for 1 hour.
