Planted based, refined sugar free and utterly gorgeous. Can easily be made Gluten Free also.

I know its summer but...

Could not resist making pies with some vintage pie dishes I recently acquired. Also, its a good time to be thinking about Autumn pie filling ideas...

This one is plant mince, mushrooms and gravy. Pie's will feature heavily in the autumn menu 🥧

Summer Fruit & Cream Cheese Tray Bake

Seasonal baking with Cherries. Nectarine. Plum.

Inspired by a cake my Sister baked for my Dad when we were younger... A perfect way to use fruit that is slightly over ripe and as for the cream cheese rippled through the sponge, well it makes as much sense as sausage and mash (all plant based obv's).

The real question to ask... Custard or Cream?

Sticky Orange Cake

Recipe I veganised- Nigella's Clementine Cake

The recipe called for a large number of eggs... I used soya yogurt, but being made with almonds instead of flour it was an incredibly dense/wet cake...Which I made even more moist with the addition of a cardamom and orange syrup (my own recipe.... I felt well fancy when I made that!)

I will attempt this again but play around with the egg sub. Tasted divine a few days later with a dollop of Oatly creme fraiche and some blueberries.

My take on the Biscoff Cheescake by the lovely Juilet Sear.

I made two small portions to have after dinner last night... My spin- Juliet's ingredients but with cherry compote, grated dark chocolate and fresh cherries.

What this Jamie Oliver pud lacks in visual appeal more than makes up for it its unctuous cocoa warm sweetness. Served warm with the holy grail that is Oatly Cream.

VEGAN and GLUTEN FREE

How I changed it- The recipe makes quite a large one that serves 12. I actually quartered the recipe (we made 4 portions from it).

Vegan-ise with your eyes closed- its just a case of swapping the butter and milk for planted based alternatives. Also, I had some salted caramel chocolate kicking about and I stuck a few chunks in the batter before cooking.

Summer Birthdays can only mean one thing...

Its still raining today... What better excuse to bake something warming and sweet.

I have made this many times, with a few different variations such as gluten-free and extra spicy (a hint of chilli and preserved ginger).

Indian Spiced Cheesy Scones

Rain, rain go away... Give me (vegan) scones 'cause the skies are grey. And butter. Warm melted butter...

Ate these still warm with herb butter. With a huge mug of oaty milk rooibos tea. Rainy day heaven.

NerdAlert: Scones are a great one to vegan-ise beacuse alot of the recipes don't use egg... So just grab your dairy free butter and get scone-ing.
