*Andritsaina owes its name to the wife of a Cretan shepherd named Andrikos, who while chasing his runaway sheep, came to a spring on mount Lykaion. He decided to built there an inn that after his death was kept by his wife Andrikaina (meaning "the wife of Andrikos"). From her name the inn was named "The hostel of Andritsaina". When houses were built in the surrounding area, the settlement was named "Andritsaina".

*Andritsaina is located close to the famous Temple of Apollo Epicurius (the god of healing and the sun) which is thought to have been constructed towards the middle of the 5th century B.C by Iktinos, the architect of the Parthenon in Athens.

Let's make a healthy Trahana & Spinach Tart together!!!
Ingredients
For the tart dough:
• 250g flour
• 90mL Extra Virgin Olive Oil
• 180g Greek style low fat yoghurt
• pinch of salt and some thyme
For the trahana and spinach mixture:
• 1 small onion
• 1 leek chopped
• 150g fresh spinach
• 1 bunch of dill
• 3 eggs
• 3 tbsp Sour Trahana from
• 40g cream cheese
• 120g gruyère cheese
• 200g soft goats cheese
• 2 tbsps Extra Virgin Olive Oil
• Salt and Pepper to taste
Instructions
1. In a mixer combine all the ingredients for the tart dough until it doesn't stick to the bowl.
2. With the help of baking paper flatten and shape your dough to fit in a 28cm tart pan which you have brushed slightly with olive oil.
3. Put the tart base in the fridge until the trahana-spinach mixture is ready.
4. Sauté the chopped onion and leek until shiny.
5. Add the spinach and stir until it becomes a nice mixture.
6. Chop up the fresh dill and add it to the pan.
7. In a big bowl mix the eggs with the cheeses, all the sautéed ingredients from the pan, the trahana, salt and pepper and combine together.
8. Transfer the mixture onto the tart base and cook at 180°C for 40-45min until the top becomes golden brown.
9. Enjoy your tart warm or cold!

Ingredients
For the yeast mixture:
• 24g dry yeast
• 250mL warm water
• ½ tsp sugar
For the dough:
• 400g sugar
• 225g unsalted butter
• 6 large eggs
• 250mL whole milk
• 1 tsp crushed Chios Mastic Tears
• 1½ tsp ground mahlepi
• 1,200g (8 cups) flour
For the egg wash:
• 4 egg yolks
• 1 tbsp milk
• sesame seeds or thinly sliced almonds for garnishing the top
Instructions
1. Combine the water and sugar in a bowl. Add the yeast mixture and mix gently. Set aside for 30min so that the yeast is activated.
2. Meanwhile, beat the sugar and butter together. Add the eggs and continue to mix. Once well combined, add the milk, mastiha and mahlepi, and finally the yeast mixture. Mix until combined.
3. Add the flour, one cup at a time, and mix until combined. Mix and knead your dough by hand in a large bowl.
4. Keep your dough in a large bowl and cover it with a few kitchen towels to keep it warm.
5. Your dough should double in size. This can take 3-4hours. Punch your dough down to release the air.
6. For 6 tsourekia, divide your dough into 6 equal parts. Let the dough sit for about 20min. Then, each part will be divided into 3 balls of dough. Each ball should be shaped into a long, tubular, piece of dough.
7. Once you have 3 pieces of dough shaped into logs, pinch one of their ends together so that they are all connected. Then, start braiding by passing the right piece over the middle one. Then, pass the left piece over the now NEW middle one. Repeat, passing the right strand over the now new middle one. Keep repeating this process until you have reached the end of your dough. Pinch those ends together and cut off any excess dough.
8. Allow your formed tsoureki to rise in a warm place, for approximately 2-3hours.
9. Preheat your oven to 180°C.
10. Once the tsourekia have risen, prepare your egg wash; mix together 4 egg yolks with 1 tbsp milk and brush carefully on top of the tsourekia. Sprinkle with sesame seeds or sliced almonds. Place your tsourekia in the middle of the oven for 20-25min, until golden in colour.
11. Enjoy!

Ingredients:
For the vegan Greek Pastitsio:
- 500g Andritsaina Thick Macaroni No. 2 (for Pastitsio)
- 250g grated vegan parmesan
- Breadcrumbs
For the vegan mince substitute:
- 500g Bioagros Organic Lentils
- 250g white mushrooms
- 2 onions
- 3 garlic cloves
- 2 carrots
- 500ml tomato juice
- 200ml water from the pasta
- 5 tbsp. Extra Virgin Olive Oil
- 1 tbsp. salt
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. smoked paprika
- 1 tsp. tomato paste
- 1 tsp. sugar
- 30ml red wine
- Pepper
For the béchamel:
- 500ml oat plant-based drink
- 500ml soy plant-based drink
- 85ml Extra Virgin Olive Oil
- 90gr flour for all purposes
- 3 tbsp. nutritional yeast
- 1/4 tsp. nutmeg
- 1 tbsp. salt
- Pepper
Instructions
▪️Boil the pasta and lentils according to the instructions on the package.
▪️Peel the mushrooms, onions, garlic cloves and carrots and chop them up.
▪️In a saucepan pour the olive oil and sauté the mushrooms, onions and carrots for 4-5 '. Add the garlic and continue for 1 '.
▪️Deglaze it with wine.
▪️Add the lentils (boiled), spices, sugar and tomato paste and mix well.
▪️Then add the tomato juice and the water kept from the pasta and mix.
▪️Reduce the heat to medium, close the lid and let the sauce “rest” for about 15 '.
▪️Pour the olive oil in a saucepan over medium heat, add the flour and mix.
▪️Gradually add the plant-based drinks and the rest of the ingredients and stir constantly without stopping at all, until the mix become creamy.
▪️In a pan, put the pasta, the vegan mince substitute and finally the béchamel in layers.
▪️Add the breadcrumbs and extra grated vegan parmesan on top.
▪️Bake at 180°C for about 45 '.
▪️Wait for it to cool down a bit, serve and enjoy!

Ingridients
For the vegan “Tuna” Salad:
▪️300g Bioagros Organic Chickpeas
▪️270g vegan mayo
▪️1 red onion
▪️2-3 celery sticks
▪️2 tbsp. Extra Virgin Olive Oil
▪️1 tbsp. soy sauce
▪️1½ tsp. salt
▪️1 tbsp. grated nori leaves
▪️1 pinch of pepper
▪️Lemon juice
For the sandwich:
▪️2 slices of toast bread
▪️2 lettuce leaves
▪️½ tomato
▪️⅓ red onion
▪️⅓ fresh spring onion
▪️2 tbsp. olive oil
Instructions
For the vegan “Tuna” Salad:
• Soak the chickpeas in water overnight.
• The next day, drain the chickpeas and boil them according to the instructions on the package.
• Peel and finely chop the onion and celery.
• In a blender, add the boiled chickpeas together with all the other ingredients for the vegan “tuna” salad and beat for 2-3min, until it creates a uniform result.
For the sandwich:
• Heat the Extra Virgin Olive Oil in a pan.
• Add the slices of toast bread and let them get a nice brown colour, turning them on both sides and making sure the lid is closed, in low heat.
• Wash the lettuce, clean and slice the tomato and the onions.
• Add the lettuce to the bread, then the tomato, the vegan tuna salad and the onions.
• Optionally accompany with fresh, green salad and enjoy!
𝘽𝙞𝙤-𝙧𝙚𝙘𝙞𝙥𝙚𝙨: 𝙂𝙧𝙚𝙚𝙠 𝙁𝙖𝙫𝙖
Ingridients
For the fava:
▪️500g Bioagros Organic Yellow Split Fava
▪️1,5L water
▪️1 tbsp salt
▪️1 tsp garlic powder
▪️Capers
▪️Fresh thyme
For the caramelized onions:
▪️2 red onions
▪️2 garlic cloves
▪️5 tbsp Extra Virgin Olive Oil
▪️2 tbsp apple cider
▪️1 tsp molasses
Instructions
For the fava:
• Soak the fava beans in warm water for 2 hours and then drain them.
• Add the fava beans in 1.5L water and boil them for about 1 hour.
• Make sure to remove the foam constantly.
• Before it’s done, add the salt and the garlic powder and stir.
• As soon as the water has been absorbed, use a blender until the fava has become creamy.
For the caramelized onions:
• Peel and finely chop the onions and the garlic cloves.
• Add the Extra Virgin Olive Oil to a pan.
• As soon as it warms up, add the onions and the garlic cloves to shallow-fry for 3-4 minutes.
• When their color becomes lighter, lower the heat to medium and add the apple cider with the molasses and stir.
• Close the lid and let them get caramelized for about 15 minutes in low heat.
• Serve the Greek fava adding the caramelized onions, the capers, the fresh thyme, and some additional Extra Virgin Olive Oil (optional).
• Enjoy!
