π° BerryB Bakes: PAVLOVA π°

Serves: 6
This one's from Annabel Langbein
Ingredients
6 egg whites (at room temperature)
Pinch of salt
1Β½ cups caster sugar
2 tsp cornflour
1 tsp vinegar
For the topping:
Double cream
We've used a mixture of our cherries, raspberries, and strawberries but any berry combo works!
Method:
1. Pre-heat the oven to 180C and line a baking tray with baking paper and mark a circle about 16cm diameter with a plate.
2. Beat/electric whisk the egg whites and salt until stiff.
3. Slowly add the sugar with the whisk running, and beat until the meringue is thick and glossy (around 10 mins.
4. Finally, whisk in the cornflour and vinegar.
5. Use a big spoon to drop dollops of the meringue into the circled area of baking paper. Form into a circle of meringue, making swirls with the spoon on the top rather than flattening to a neat tidy disc.
6. Bake at 180Β°C for 5 minutes then reduce oven temperature to 130Β°C and cook a further hour.
7. Turn off oven and leave pavlova to cool in the oven - we actually do this overnight!
8. Whip up some cream (we also add in some vanilla extract and icing sugar), then dollop onto the pavlova and throw lots of berries on top
13. TUCK IN AND ENJOY!

π° BerryB Bakes: Cherry Almond Tart π°

Serves: 6
This one's from Nigel Slater at The Guardian!
Ingredients
200g plain flour
Butter 100g
1 Egg Yolk
Water around 2 tbsp
For the almond filling:
Butter 100g
Caster sugar 125g
2 Eggs
Flour 60g
Ground almonds 120g
For the cherry filling:
Morello cherry jam 250g - we've used our black cherries and added lemon juice (recipe to follow)
Cherries 300g
Flaked almonds 2-3 tbsp
Method:
1. In a food processor, reduce the flour and butter to coarse crumbs, then add the beaten yolk and just enough water to bring the dough together in a firm ball. You can also do this with your hands.
2. Wrap in baking or greaseproof paper and chill in the fridge for at least 30 minutes.
3. Heat the oven to 200C/gas mark 6.
4. Roll the pastry out and line the baking tin pushing the pastry into the corners - careful not to tear
5. Cover with baking paper or foil and then fill with baking beans. Bake for 20 minutes. Remove the paper or foil and beans and return to the oven for a few minutes until the pastry is touch-dry.
6. Meanwhile, make the almond filling. Mix together the butter and sugar till light and fluffy using a food mixer.
7. In a separate bowl, beat the eggs lightly with a fork, slowly add this to the butter and sugar mix. The mixture might show a few small signs of curdling, just add a little flour if this happens.
8. Next, mix all the flour and ground almonds in. Set the mixture aside.
9. Stone your cherries.
10. Take the pastry case from the oven and turn the oven down to 165C.
11. Spread the jam carefully over the pastry, then spread over the almond filling and scatter the cherries on top, pushing them into the mixture a little.
12. Scatter the flaked almonds over the top and bake for about 45-50 minutes, until the filling feels lightly firm. Remove from the oven and allow to cool before lifting it out of the case and cutting it into slices.
13. ENJOY!

Polytunnels are erected over the bushes to give them the extra protection that will help the fruit grow faster.
π₯³πΉ BerryBβs Thirsty Thursdays: Blairgowrie Blueberry Blazer!
Ingredients (for 2 glasses):
Blueberries 200g
Lemon Juice 1 Tsp (depending on sharpness of blueberries)
Lemonade 12ml
Basil leaves x 3
Vodka 60ml
Method:
Lightly poach the blueberries (leaving a couple for garnish) in 10ml of lemonade until skins begin to breakdown (shouldn't take longer than 5 mins). Pour through a sieve and add 2 basil leaves to the warm liquid. Leave to cool.
Then fill a glass/tumbler with ice and pour in the vodka, followed by the blueberry juice (don't pour in the basil leaves) and lemonade. Gently stir so as not to fizz up too much!
Garnish as you like - we've used a basil leaf and a fresh blueberry.
Enjoy!

BerryB Bakes: The Round Berry Drizzle Cake

Ingredients:
- 2 large eggs
- 1 tsp vanilla extract
- 175g scrummy Scottish berries
- 70g granulated sugar
- 1-2 tbsp of a mixture of lemon and lime
- 175g butter + extra for greasing
- 175g golden caster sugar
- 250g self-raising flour
Method:
1. Heat your oven to 180C/160C fan/gas 4. Grease a round cake tin with a hole or 900gram loaf tin and line the base and ends with some baking paper.
2. Put the butter, caster sugar, flour, eggs and vanilla extract into a large bowl and whisk until pale and creamy β the mixture will be very thick.
3. Spread one-third of the cake mix into the tin, then scatter over 50g of the fruit. Carefully dot and spread another third of the cake mix on top, and scatter with another 50g fruit. Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
4. Bake for 1 hr or 45 mins if you are using the round tin, until an inserted skewer comes out clean.
3. Poke the cake all over with a skewer. Put the remaining 75g fruit into a bowl with the granulated sugar. Stir in 1 tbsp of the lemon and lime juice first with a fork, mashing a little of the fruit as you go. If itβs a bit dry, add a splash more juice and spoon over the cake. Leave in the tin until the cake is cool and the topping is set and crisp.
4. Decorate with icing sugar and mint leaves for some extra flair and then TUCK IN!

π₯³πΉ BerryBβs Thirsty Thursdays: French Martini!
Ingredients:
20ml Chambord Black Raspberry Liqueur
40ml Vodka
60ml Pineapple Juice
Method:
Go to town shaking the Chambord, vodka and pineapple juice with plenty of ice. Use a cocktail shaker if you have one or a Tupperware box also does the trick. ππΌ
Strain into a martini glass (Weβre not that fancy so went with a fizz glass).
Apparently itβs best to garnish with a pineapple slice but we much prefer a raspberry ππ€€

Serves: 8
Ingredients
170g butter + extra for greasing
170g caster sugar
3 large eggs
170g self-raising flour
1.5 tsp baking powder
1.5 tbsp instant coffee dissolved in 1.5 tbsp hot water (add less or more dependant on how strong you like it)
For the icing:
225g icing sugar
100g butter
1.5 tbsp instant coffee dissolved in 1 tbsp hot water
Walnuts/cherries to decorate (up to you)
Method:
1. Pre-heat oven to 160Β°C and butter and line two sandwich tins with baking parchment.
2. Beat or whisk the butter and the sugar until pale and fluffy.
3. Whisk the eggs with a fork and then slowly add to the mixture with a spoonful of flour each time
4. When you've added in all the eggs, add in the baking powder and flour, one spoon at the time, folding this time to keep it airy and light.
5. Divide the mixture evenly between the tins and level off.
6. Bake in the oven for 25-30 minutes until the sponge cakes are well risen and firm to the touch. Leave in the tins for 5 mins and then place on a wire rack to cool off.
7. Whilst cooling, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk then cover and put to one side until ready to ice the cake.
8. When the cakes are cool, spread half the icing on the bottom and then sandwich together, spreading remaining icing on top.
10. We added some walnuts to the top of the cake and cherries around it for decoration, but that's up to you! π Then tuck in!

π₯π BerryB's Thirsty Thursdays: Raspberry Mojito ππ
One of our favourite weekend tipples with fresh, local raspberries!
Ingredients:
- 7 raspberries
- 7 mint leaves
- 1 tsp caster sugar
- 1/2 lime cut into segments
- 30ml white rum
- Crushed ice
- Fizzy water
Method:
Pop the raspberries, mint leaves, caster sugar and lime into the bottom of a tall glass and give a bash with the end of a wooden spoon or muddler (if you have one) - making a bit of a mush in the bottom of the glass.
Then add lots of crushed ice and pour over the rum. Give a stir and then top up with soda water. Give another stir, add some garnish if you like and ENJOY!

BerryB Bakes: Cheesecake with Blackberries & Raspberries

Serves: 12
Ingredients
*3 Eggs
*120g Castor sugar
*360g Full fat soft cheese
*1 Lemon - rind and juice
*150ml Double cream
For the base:
*60g Butter
*120g Digestive biscuits blended to crumbs
Decoration:
*150g of Raspberries
*Handful of Blackberries
Method:
1. Pre-heat oven to 170Β°C and generously grease the inside of a 7inch cake tin.
2. Melt the butter and gradually mix in the digestive biscuit crumbs, then press evenly across the base of the tin
3. Beat or whisk the egg yolks and sugar together until thick and creamy
4. Sieve the cheese and the whisk or beat into the mixture with the lemon rind and juice, as well as the cream,
5. Whisk the eggs whites to a soft foam and then fold into the mixture.
5. Divide the mixture evenly on top of the biscuit base
6. Bake in the oven for around 1hr
7. Allow to cool and when cold, remove from the tin and leave in a cool place for 2 hours to make sure it is firm
7. Decorate with raspberries and blackberries as you like!
8. Tuck in!

Our early variety, the Kordia, are LARGE, sweet, JUICY, and dark cherries. They were PICKED from the tops of trees on our farm THIS MORNING and are now READY TO BE EATEN down at the stall!
π₯π BerryB's Thirsty Thursdays: BERRYB GIN FIZZ ππ
A beautifully refreshing drink that gives you a natural burst of energy no matter the weather.
Ingredients:
* 60ml BerryB drink, packed with 46 berries from 5 different fruit.
* 60ml Gin of your choice
* 60ml Soda Water
* Blackberry and thyme for garnish
Method:
Mix equal parts (we used 60ml) BerryB, Gin and Soda water over ice. Then decorate as you like - we've popped a blackberry in and garnished with thyme!
It's just as tasty without the gin if you're looking for a non-alcoholic berry drink!

In a matter of weeks, these cherries will be ready to be picked! Our harvesting starts around the 3rd week in July and lasts for 4-6 weeks.

Ingredients
180g butter, soft
180g caster sugar
3 fresh eggs
180g self-raising flour
260ml double cream
1 tbsp icing sugar + bit more for sifting
400g Strawberries from the BerryB stall!
Method:
1. Pre-heat oven to 180Β°C and butter and line two sandwich tins with baking parchment.
2. Beat or whisk the butter and the sugar until pale and fluffy.
3. Then add the eggs one at a time, whilst continuing to whisk.
4. Add in the flour, one spoon at the time, folding this time to keep it airy and light.
5. Divide the mixture evenly between the tins and level off.
6. Bake in the oven for 20 minutes until the sponge cakes have risen, are firm to the touch, and a beautiful golden brown colour. Then place on a wire rack to cool off.
7. Whilst cooling, slice the strawberries in half. You can also cut the middle of some strawberries in a fine line, for added decoration at the end.
8. Whip the cream till quite stiff and then add in the icing sugar.
9. When the cakes are cool, spread half of the whipped cream on top of each one and place the strawberries on top in whatever design you love.
10. We like adding some of the thinly sliced strawberries in the middle of the cake for a bit of added showbiz π Then gently sift icing sugar over the top.
11. TUCK IN!
