So in the past 2 days I have been busy making Cheesecakes. These are today’s makes.

I used 8kg of Soft Cheese and 8 pints of cream! How many cheesecakes did I make?? (Too many!)

I also made a batch of Mint Choc Chip Fudge!

And despite it being August, I have had my first order of a cheesecake for Christmas!

I am not going away as close to Christmas this year so can make cheesecakes for Christmas - collection / delivery would be 22nd December as my eldest’s birthday is the 23rd! Let me know if you want to order one!

Must be almost Easter! Easter Egg Cheesecakes made for the girls! Extra cheesecakes made as well a Lemon Drizzle Cake and Sultana Loaf!

On the theme of Pecans - I also decided to make some Praline Pecans - now these aren’t as yummy as the Kirkland ones Steph got me years ago - but a good first attempt!!

Well brother enjoyed the Traditional fudge with almonds - so he requested some pecan and raisin fudge. I’m hoping this sets as well as the almond one! Lee Tett

Added to the list as requested is Lemon Meringue fudge and I also will add traditional with chopped nuts as my trial went well and I think it tastes yummy!

Last night I decided to make some traditional fudge by I added in chopped almonds after I finished beating to see if it would still set ok.

It absolutely did set and I have tried a few pieces and it is yummy! I am chopping up the remainder and have a few different people who are going to do a taste test to see if they agree!

Is it even Easter without an Easter Egg Cheesecake?? According to Jaya absolutely not!

First egg in first picture is an Oreo cheesecake - second Oreo base with Biscoff middle.

Second picture is a brownie base cheesecake egg

And third picture - foil trays are one Oreo cheesecake and one Oreo Biscoff cheesecake.

All made for my sisters.

Up and at it early. Two batches of flapjack have been made. One is for an order - the other for the boys.

Also decided to make myself a batch of fruit scones as I haven’t made any in months!

I have been back in the kitchen baking for the first time in months. I forgot how much that I enjoy it!!

With Valentine’s Day coming very soon, I have decided to do some treat boxes ready for the big day (or not for those of you sensible enough to be single 😝!)
