Pecorino "Primo Sale" is a fresh cheese obtained from Tuma, which is sprinkled with salt and then left to mature for about a month. This is the second degree of maturation of pecorino. It comes with a color that is closer to white than to yellow, this is due to the short period of aging to which it has been subjected.

Semi-stagionato (meaning half-matured), this Pecorino has a lovely savoury, with a mild spicy hit of flavours with a familiar salinity on the palate.

Stagionato (meaning matured), as it ages, this pecorino loses its milky white color and takes on a hay-colored, ivory hue. The sweet, silken texture of the original cheese slowly gives way to a sharp, zesty flavor with a brittle texture.

The pork luganega salt, pepper and fennel or just Salt&Pepper is a sausage made with pork meat typical of different regions in Italy, mixed with fat and spices. The luganega pepper and fennel is excellent grilled, used for the preparation of risottos also used as a common sicilian street food panini with sausages.

Cooking Instructions
1. Pre-heat pan with a drizzle of oil on medium heat. 2. Add the sausages and fry gently for approximately 11-13 mins, turning regularly until thoroughly cooked. 3. Ensure piping hot throughout before serving.

What are crushed olives?

In Sicilian dialect they are called alivi cunzati or alivi scacciati and they’re prepared during autumn in large quantities to preserve over the winter and consume all year round. Tasty and appetizing, they are generally served as an appetizer along with many other small bites like cheese and cold cuts. The name crushed olives comes from how you make them: the olives are crushed and opened with a weight such as a meat tenderizer or a stone, as they do in the Sicilian tradition.

It is not easy to retrieve whole fresh Olives in the UK, especially in spring time it would be impossible!
