I love this dish! I have from the moment I first tried it. Thai amber curry. …. Yum!

This dish is so warming and nourishing - and during my gut cleanse I couple it with roasted vegetables and brown rice - it is delicious.

There are no complaints from my family that they are on a gut cleanse when eating such flavoursome and colourful dishes 😄😋✨

When getting ready for a gut cleanse, prepping healthy snacks is so important. They will help satisfy any craving, and keep your body energised and feeling clean.

These gut cleanse snacks have become a huge family favourite, and they are often requested even when we are not on a cleanse.

Today I made dehydrated sunflower seeds, ginger and turmeric dehydrated pumpkin seeds, and chilli baked almonds. All are great sources for your omega oils and healthy fats, which are essential for keeping your brain functioning optimally.

Here’s a dish I’ve created for my up coming gut cleanse. I haven’t yet got a name for it. But it was super yummy, and the first time I’ve experimented with cooked radishes.
It was an Asian fusion rice noodle dish with roasted onion, peppers, red onion, radishes, and spring onion. Favoured with ginger, fresh turmeric, tamarind, white miso and lime. It was very very tasty!

Welcome to my refined sugar free chocolate snaps! 🤤💕
These are such a winner in our house - they taste seriously good, better than your average shop bought chocolate.

These are great if you are starting a gut cleanse and are finding it hard to ween yourself off the sugary snacks.

Eating healthy food doesn’t need to be hard.
I currently have covid, and doing anything out of bed is proving difficult. Yet when I’ll it is still so important to eat healthily

So I resorted to quick fixes for healthy eating, such as - microwaveable rice, frozen peas, I air fried carrots which is a lot easier than boiling, and I baked mushrooms, spinach and sea bass - again super easy because you can just leave them in the oven and sit down. When they are baked they are done. You end up with a very healthy nourishing meal, with very little effort needed and only a small amount of washing up afterwards. All important things when you feel lousy .

I love this time of year and eating what I have foraged.
This is the first time I have cooked chicken of the woods mushroom, and it was delightfully easy and extremely tasty!
This is COTW nasi gorang with a COTW steak! Oh my goodness they were both amazing! The steak was air fried with sweet potato and green peppers, and then added to the nasi gorang. The cubed COTW was sautéed in a pan with onion and garlic….yum yum yum!

Sticky Wi***es water is a super refreshing way to start your day 😁
The taste is often described as being like cucumber water, but I would disagree. It is similar in the fact that it acts as a refreshing drink, but for me it tastes more nutty and herby. It is seriously good though, and best of all it is free! 😀✨

Also known as Cleavers, this water is great for detoxing the body and cooling the body down. It supports the lymphatic system, kidneys and is a diuretic. It is also a great drink to have if you have swollen glands, or if you are feeling sluggish as it can energise you.

Tonight we are having foraged fewer cornered leek vegan pesto with garlic infused veg. Thanks to The Foraging Chef, who took us on an amazing foraging course this weekend!

It was super tasty, and the great thing is my son was really enthusiastic about eating it as he had helped picked the food.

In fact, yesterday I came back home to a tea made with flowers that he had learnt to pick on the course - he went after school to pick some more so he could make me a tea 🥰 If anyone Cambridge based once to learn to forage, get in touch with Steve, he’s great!

I’ve not been posting a lot over the past 3 weeks, as I have been in bed with covid. It wasn’t a mild case, but it wasn’t too bad. However it did wipe me out. I’ve had very little energy.

I wanted to post this meal, to show you that it doesn’t take a lot of effort to cook a healthy tasty meal. Even if you are I’ll, or have little time on your hands.

I made this when I had no energy. It took 10mins to cook the spinach pasta, and 15 mins to roast the veg in my air fryer. Then I opened a tin of lentils, and tin tomatoes, add them to the pasta after I had drained it. Heat them up for a couple of extra minutes, and then served it up, adding the roasted veg on top.

It created a hearty and cosy meal, full of flavour and goodness, with very little to clean up afterwards. Which was a relief in my state. It also left me with loads left over, to eat later 😄

The lentils are rich in fibre, folate and potassium making them a great choice for the heart and for managing blood pressure. They are also a source of energising iron and vitamin B1 which helps maintain a steady heartbeat, which is helps when fighting covid. The iron also helps with carry oxygen around the body and sleep better, all which help when fighting covid.

Fast food doesn’t need to mean unhealthy food. This took less than 20mins to make with the help of an air fryer. My new much loved gadgets 😀

Many people don’t know you can use an air fryer to roast, dehydrate, and fry food.
Today I started off my air frying sweet potatoes and carrots, fennel and onion, and finished it off by adding garlic, broccoli, lentils, sun dried tomatoes, cherry tomatoes, and spices and a splash of white wine.
It was delicious! Especially with wild rice 🤩😋

Air fried oyster mushrooms are packed full of goodness, and are a super tasty vegan treat.

Tonight we had them with wholemeal cous cous, roasted fennel, onion and red peppers and homemade vegan tartare sauce. Yum yum!!

After an indulgent Christmas it can be hard to quit the sugary and salty fast foods. A small psychological trick is to eat colourful foods, it makes your body more alert to the food and makes the food feel more satisfying. When you eat colourful foods the cravings ease for longer.

Here’s a colourful dish for dinner, beetroot and spinach pasta with a lentil and sweet pepper sauce.

Before starting a cleanse, it is important to gradually begin to improve your diet.

Don’t go in hard. We will be running our gut cleanse in January. So to prepare I will be slowly cleaning up my eating. This is particularly important after the Christmas period of over indulgence.

That means more of meals like this - pizzas loaded with fresh veg and homemade vegan parmesan- yum! 😋🤤
