Maturity Analysis 🍇

With harvest approaching, our Winery Team have been busy sampling the fruit from each of our vineyard blocks to assess the ripeness across our Chardonnay, Pinot Noir and Pinot Meunier bunches.

The grapes are selected, crushed and then the juices are analysed using our state of the art Foss machine to gauge levels of maturity. This helps us to plan when each of the individual clones of these three varieties will need to be picked.

Happy Pinot Noir Day!

To celebrate, we thought we would take you “Down the Rabbit Hole” to get to know our latest release better…

Exuding a true sense of place, our Rabbit Hole Pinot Noir 2023 has been created with fruit specifically selected for its maturity and concentration. Did you know that it is named after one of the idyllic country roads in our home village of Barham?

Once the grapes were carefully harvested, our Winery Team employed expert techniques, such as pump-over and pigéage to extract the intense flavours and characteristics of the Pinot Noir juices. After completing primary fermentation, the wine was then drained off its skins into mostly old and some new French and American oak barrels, where it underwent malolactic fermentation to produce a balanced wine with a luxurious finish and a touch of spice. After six months ageing in barrels, the wine was lightly filtered and bottled in late spring 2024.

Ready to pour, this exquisite English red wine has wonderful ruby / garnet hue and displays notes of mulberry with violet, cherry and sweet spice aromas. On the palate there is ripe, red berry flavours with hints of forest floor. It is perfectly balanced with an elegant structure and silky tannins, leading to a lingering, textured finish. We are proud to say that all of our wines are vegan and vegetarian friendly.

It truly has been the summer of sport and we have selected own medal-winning Flint Fields Blanc de Noirs to toast the closing weekend of the Olympics.
