As we look ahead to 2024 we'd like to thank all our lovely customers for their support this year, it's been a very exciting one! 2023 saw the creation of not one, but two of our own new cheeses - a real dream come true! - and the opening of the first Ty Caws shop, another huge milestone for us! After a successful Winter season we have made the exciting decision to make 28 Castle Arcade our permanent retail space and new home! 🍾✨
We'll of course continue to attend all our weekly Farmers Markets, and we can't wait to welcome you back to the shop after the new year 💛

A British-made hybrid of Vacherin and Camembert, Winslade has an unctuous gooey paste at it's core, spruce wrap helps it keep its shape as it ages, and brings this cheese a lovely floral earthiness. Winslade was recently awarded a coveted Gold medal at the World Cheese Awards, and is a must-try in our eyes!

CHEESE OF THE WEEK 💛 Isle of Mull
Strong, crumbly, creamy, Isle of Mull is a cheddar that packs an unmistakable punch! Back in our cutting room after a short break, we're super excited to have this heritage cheddar in stock!
The Reade family began making cheese in the 1980's, dabbling in the the craft of cheesemaking, whilst still living on their Somerset farm. From this self-taught start, and a drive to live outside the box, cheesemaking has become the core family business. Historically, cheesemaking on the islands had long been a necessary method of conserving the plentiful milk supply of summertime. In these less accessible areas of Scotland, hard 'farmhouse' cheeses has been a staple, offering longer shelf-life than softer cheeses or other milk products.
Today, Isle of Mull is made to the same recipe the Reade family developed for their very first cheese at Sgriob-Ruadh farm, bold, creamy with a distinctive bite, it is no wonder it remains a firm favourite amongst cheesemongers in the highly competitive British Cheddar scene.

The Big Cheese Weekender is BACK for 2023 - run by The Academy of Cheese, the BCW is a festival crammed full of webinars, events and general cheesy fun and up till now has only been on-line, but this year is being streamed for the first time live from Chiswick Cheese Market!
Log on to catch demonstrations, tastings & supplier interviews, all day long! We'll be showcasing the best of Welsh cheeses + posting all updates on Sunday 15th at the Chiswick Cheese Market, this year's host of the BCW.

Cheese of the Week! Abaty Glas 🧀
Abaty Glas is a wonderfully buttery smooth blue cheese that comes to us from Caws Penhelyg, Aberystwyth. Made by cheesemaker Roger Yorke, using raw unpasteurised milk from a single herd of local cows, this cheese is carefully handcrafted, and it shows! Delicious rich & salty notes compliment the amazingly creamy texture. Sample Award-winning Abaty Glas with us this weekend:

We’re thrilled to announce we are almost ready for the release of Hiraeth and Crwys, our two heritage recipe cheeses! We will have limited batches ready for sale this year, with larger stocks to follow in 2024 when a fresh flush of Spring milk will be available! 🐑
Cheese of the Week! 🧀 Abaty is an organic, raw-milk soft cheese very similar to a classic Brie. Made on a very small scale by Roger Yorke in micro-dairy, Caws Penhelyg, Aberystwyth, Abaty is carefully crafted in small batches with local milk.
Full flavoured with lovely tones of light acidity to cut the buttery richness, this Brie is incredibly versatile and perfect for enjoying alongside crispbread and fresh fruits & honey in this gorgeous weather 😎

Hot off the press, this new cheese book has been written by cheese chum Emma Young - AKA 🧀
The Cheese Wheel is a great reference book to so many incredible cheeses – written with useful pairings and detailed notes on each cheese. Emma’s goal with this book is to ensure we all have a little more understanding of cheese and ultimately get us to discover and eat more cheese!

This little triple crème cheese is made to the style of a French Brillat Savarin and Chaource.
Extra double cream is added to the milk before the cheese is made which gives this cheese super rich qualities with texture like butter. Oh la la!
Made in Oxfordshire by Rose Grimond and team, using their own organic milk.
We picked up our first batch of cheese last week where we also had the pleasure of lunch at their very own Cheese Shed ! - a barn converted to offer the ultimate grilled cheese sandwich 😍 A must pit stop if you’re ever in the area!
For Bix, we recommend popping open a bottle of fizz for this one and enjoy!

CHEESE RECIPE - something for the weekend !
We love a good cheeseboard, but we also love a good recipe with cheese!
This week’s recipe comes from Mel who is a confessed cheese addict, and loves to chat about cheese at our Rhiwbina and Pontcanna markets!
We’d love to hear about your favourite CHEESE recipe and if featured we’ll give you a £10 voucher off your next cheese purchase!

Mel’s recipe:
1. Roast chicory with olive oil, white wine vinegar and honey - covered with foil for 20 mins, then without for 10 mins.
2. Toast rye bread, or favourite loaf from your local baker.
3. Layer a chunk of Mrs Bells Blue, red onion chutney, the chicory, toasted walnuts and a drizzle of honey.
4. Finish the dish with micro greens from 🥬
