It’s all about the ingredients right?
So many eateries claim that they are doing things ethically and sustainably - which are such amazing buzz words
we invest everything into our end product & careful consideration is given to its sourcing. This is one of the main reasons why our dishes are so flavoursome. Not one dish is average
These are our sausage rolls made from pigeon and pork offal which we turned into ‘sausage meat’. Then wrapped in our own pastry

We are investing a great deal of time & energy in building our reputation at Dark. This business was inspired by a personal love of using less popular cuts of meat, harnessing their flavour & creating something wonderful in turn
We are fast becoming known for nose to tail, root to shoot style cooking and are incredibly proud of it
We source all our ingredients through trusted suppliers where we can track the meat to farm & veg to field. This philosophy has held strong and something we want to reflect in this project
We are currently developing our vegetarian offering to mirror that of our meat based menu but working with such delicate flavours requires a little more thought so please bear with us
If you want something a little different from your city centre eatery, a little alternative but with some insane flavour please pay us a visit & support a new independent venue

The many stages of faggots:

1. Onions sweat with Marsala & herbs
2. Coarsely minced pigs pluck (lungs,liver & heart) & fat
3. Minced belly pork
4. Breadcrumbs
5. Caul fat to wrap
6. The raw product...ready to cook off in a high oven and serve on a bed of Carlin peas.

Definitely a labour of love, but done properly and utterly delicious. Will be on the menu from midday tomorrow. I suspect these are going to fly so get in quick.

What a difference a week can make 🖤
It’s taken a huge amount of effort and it’s caused phenomenal levels of frustration & heartache but we are finally OPEN. We welcomed our first customers last week as we settled into our launch menu
This week sees us more confident and more settled in our new home allowing us to make a few tweaks each day. This week we go a little darker, a little more what we aspired this new Cardiff eatery to become.
