This beauty is made from minced venison hearts, lungs, liver, kidneys & trim then wrapped in caul fat found around the stomach of the deer

They are then braised in stock & onions to produce this glowing ball of heaven

Resting on a bed of good old fashioned swede & carrot mash, it’s the perfect meal for this time of year

12th of August we will be hurtling back from Yorkshire with fresh grouse shot that day on the moore. We do this every year in celebration of the glorious 12th, the first day of the shooting season. Book now if it’s your bag numbers are limited!

When asked by to come up with a fun & creative day out for him to waste some film on, we put our swedes together & came up with our guide to the Cotswolds.

We spent the day visiting some of our local suppliers (& of course our fave local pub for lunch) collecting their produce that they passionately produce on the way. All for us to dish up a big feast that evening at The Lamb.

We are very guilty of serving a good veg with a cheese or curd. It’s ultimately just a good lubrication for a lovingly grown local vegetable.
