DRIVER VACANCY
Location: Chipping Campden HQ
We're looking for 1 or 2 additional drivers (25+, clean license) to deliver our baked goods each day.
Start time 5am to pack bread and load van. Ability to problem solve and attention to detail are key requirements.
May suit retired.
£12.82 per hour.

ADDING SOME HERITAGE TO OUR BREAD
We’ve been working on improvements to our Country White Sour in the background for a few weeks and we think we’ve cracked it with little heritage upgrade.
Using Miller’s Choice flour, along side Rye and flour, we’ve packed even more flavour in, boosted the fibre and mineral content and supported our local miller.
Miller’s Choice Heritage Stoneground Wholemeal Flour is made from a blend of wholemeal heritage grains that provides a flavoursome flour packed full of minerals, vitamins and fibre. The provenance of Bruern Farms’ grain is key. Their grain is grown, milled and bagged exclusively by them at Bruern Farms near Chipping Norton. Nothing is added to it and all blending is done in the field, not in the mill. Because they mill under 500 tonnes a year, by law they are not required to put additives in their flour.
Heritage grains are grains that were grown before the introduction of food industrialisation. Compared to modern wheat, heritage grains have a lower gluten content and are healthier and easier to digest. They provide a larger array of vitamins and minerals, more protein than regular wheat, and more amino acids.
It’s not just better for us though, it’s better for the planet too.

EPIPHANY
King's Cake, A traditional French pastry associated with the celebration of Epiphany, which commemorates the visit of the Magi (the Three Wise Men) to the infant Jesus. The name translates to "king cake" in English.
Included is a crown and fève
When the cake is sliced and served, the person who discovers the fève is crowned the "king" or "queen" for the day and gets to wear their crown.

CHRISTMAS ‘23
Wow, wow, wow. What a week.
It’s hard to believe that was our 4th Christmas Bake and what a bake it was.
Thank you to all that ordered their Christmas bread and sweet treats from us.
Over the last three days, our little team across Stratford and HQ have baked over 1500 loaves of bread and 2000 pastries (We lost count how many mince pies) An incredible feat - especially when star had a little run in with a tree and left us a baker down (Christmas wishes to him, he’s a very lucky boy truth be told!)
Big shout outs to the FOH superstars, for leading the charge solo at Stratford, Lori for her Christmas treats & rolling far too many croissants, D for rocking the shaping table and and new kid on the block for putting the extra yards in in front of the ovens all night, every night.
A rather large nod to my partner in crime, Danni, for looking after two tots whilst 7 months pregnant single handedly.
Having barely left the bakery for a week, I’m off to see if she remembers who I am!

FESTIVE OPENING TIMES
Well that’s snuck up on us quickly. The big day is almost here.
We’re open as usual and churning out as many festive treats as we can until 23rd. Christmas Eve we’re open for pre order collections only - and there is a lot!
What’s looking like a record bake will be followed by a scattering of R&R for the team before going again in the new year.

The Role:
We are currently seeking a passionate and dedicated Kitchen Team Member/Cook to join our thriving bakery. This is a fantastic opportunity for a culinary enthusiast who takes as much pride in making seasonal specials as our focaccia and bacon sandwiches.
Responsibilities:
+ Prepare high-quality sandwiches according to MOR Bakery's standards.
+ Manage all aspects of the cooking process for our menu items, including the preparation of fresh focaccia and bacon sandwiches.
+ Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, and taking out trash.
+ Assist with bakery duties such as bread and pastry preparation as needed.
+ Adhere to all sanitation and food production codes.
+ Collaborate effectively with team members to ensure the smooth operation of the kitchen.
Qualifications:
+ Previous experience in a bakery, café or restaurant environment is highly desirable but training can be provided.
+ Ability to work in a fast-paced environment, and remain calm under pressure.
+ Ability to multitask.
+ Excellent communication and teamwork skills.
+ Passion for baking and good food, with a keen interest in maintaining high quality and service standards.
+ Able to work flexible hours, including weekends and public holidays. Day shifts only.
+ Food handling certification is a plus.

Chippy, it’s been on the to do list for a while, we’re upping our lunch game for you at the cafe.
We’ve centralised our production kitchen meaning you’ll be getting all our toasties and focaccia sandwiches every day.

BACK TRACKING
So, slightly embarrassingly, it turns out that technically we’re not actually allowed to close two days a week after all.
This naive baker signed up to a lease which stipulates 7 day trading. Our landlord has wielded their Bell of power in Court and instructed us to reopen!
Really it’s good news, if a little hard to manage right now. So as of 5th June; Stratford will reopen 7 days a week followed by Chipping Norton on the 12th.
Thank you to all those that sent messages of support and understanding following our original post, it was hugely appreciated in an apprehensive moment.
Sadly that day off will have to wait a little longer,

Opening hours
From next week we will be closing the cafes Monday and Tuesdays. Stratford will be opening slightly later, like Chippy, at 8am.
BUT WHY?
It’s a huge decision for a small business, losing two days takings is terrifying. Right now we're running at max. We're a small team and were not making all the exciting things we want to be able to.
An extra couple of days will see more variety better quality and afford us some rest. Our wholesale operation will continue to be 7 days a week.
On a personal level, I haven’t had a day off since Christmas Day and regularly work 90-100 hour weeks, it’s unsustainable, affecting the business development, and more importantly, I don’t want to end up hating pastries.
If recruitment improves we may return to be a 7 day operation but, for now, Sunday will be your last opportunity to get bread from us until Wednesday … unless you visit one of our trade customers!

BIRTHDAY CELEBRATIONS
Well, that’s gone by quickly.
MOR Chipping Norton is 1 year old. Thank you for all your support over the last year. Despite being hidden by the neighbour’s scaffolding for half the year you’ve managed to find our hidden little bakery cafe and welcomed us with open arms. We will always be full of gratitude.
To say thank you, we’ll be handing out Birthday Cruffins to the first of you merry folk who brave the arctic tomorrow (whilst stock last!).
We’re constantly evolving at MOR Chippy and will strive to give you the best coffee, bakes and an expanding range in our second year.
