Been a long long time since I put a post up. It's only right to make a comeback with my favourite cake I've made in my absence.
The brief was for it to be themed on his favourite car. Who says cakes can't be masculine?

This was by far my favourite cake to date! 3 layers of gluten free chocolate sponge covered in ALL things Spiderman.
I was so happy to be able to provide this little boy with his first themed cake that was adapted for his allergies.

Thought I would share my favourite pancake recipe to you all as it is honestly not to be missed! If banana bread and pancakes had a love child THIS would be it.
It is a vegan/ dairy free recipe and can easily be changed to gluten free by swapping the flours and adding 1/4tsp of Xanthan Gum.
Recipe:
160g peeled mashed bananas
110g plain flour
1 tsp baking powder
120ml dairy free milk (I used coconut milk)
1tbp maple syrup
80g Chocolate chips
3tsp coconut oil
1- Thoroughly mash the bananas then transfer to a bowl and whisk in the other ingredients. Do not over whisk, stop once everything has been combined. It will be a lumpy mixture.
2- Heat a teaspoon of oil in a frying pan over a medium heat and spoon the mixture in to the pan.
3- Cook for around two minutes on each side until golden brown.
I served mine with Nature's Store Hazelnut & Cocoa Spread, a bit more maple syrup and any fresh fruit I could find. But your possibilities are endless on topping choices.
