Didn't get round to making a birthday cake this year so made some cupcakes to take into work. Vanilla Cupcakes with Cream Cheese Frosting and Raspberry Sprinkles.
Not made Whoopie Pies in ages so it was good fun making them again today. Bit of an experiment too as adapted the recipe to make a Biscoff version. So they have bits of Biscoff biscuits in the sponges instead of chocolate chips and Biscoff spread in the filling. Fingers crossed they taste good.
I've neglected this page for quite a while as I haven't been doing much baking. But I am starting to get back into it. Starting a new job that his hybrid working from home and in the office means I have a new set of guinea pigs to bake for! So for my first day tomorrow I've tried a new brownie recipe from John Whaite- curly wurly brownies. I have tried one this morning and they are sooo good!
Feedback on the Cinnamon Roll Blondies:

Trying to get back in to my baking, so had a bit of a session today.
Made a batch of macarons as it's been ages since I made some.
Also did some chocolate orange brownies, cookie dough & rolo brownies raspberry & white choc blondies and some cinnamon roll blondies.
The cinnamon roll ones are a bit of an experiment and I have added some cream cheese frosting to them so the feedback from my guinea pigs will be interesting.
Unfortunately ill health has curtailed my baking exploits once again since my last post. But hopefully I will be able to get back into my baking ways very soon.
Last week it was that time of year again when my nephew sets me a massive challenge for his birthday cake!
So after Last year's Lando Norris themed cake he decided he wanted to go more than one or two stages further and really challenge his Aunty Karen and as usual Aunty Karen found it very difficult to say no when he gets his "pleeeeeaaassse" face out!
I wasn't 100% happywith it as there were some lessons to learn if I ever do one again but my nephew absolutely loved it.

Not been up to making myself a birthday cake the last couple of years so now I am feeling better and as it's a big birthday I decided to go all out. It's a few days early but I won't have time during the week. Been wanting to try a cartoon cake for a while and I'm pretty happy with how it turned out.

4th and last baking session of my time off was my annual cinnamon rolls baking session. Tried a new recipe for the cream cheese icing and it is so tasty.
Baking session number 3 of my time off was assisting my nephew to make some Christmas gingerbread biscuits. Very proud of him as he did most of it himself with only a bit of help.

You may know from my page that Rhubarb is one if my favourite things to bake with (and eat!). Years ago for an all too short period M&S did a rhubarb cookie that was incredibly good and I've always wanted to replicate it in some way. But as rhubarb is a very soggy vegetable I wasn't sure how it would work.
Well I finally found a way to make candied rhubarb pieces thanks to Google and decided to experiment with my last crop of the year from my very small rhubarb patch. I can happily report that this was definitely the way to do it and the pieces of rhubarb have not made the cookie soggy at all and the pieces have kept their shape. I can also say they taste delicious too. The rest of the batch have gone in the freezer to take out and bake as and when. Can't wait for rhubarb season again next year!
Attempted some baking for the first time in a while. Just some chocolate orange brownies and white chocolate and raspberry blondies. They went fine but it showed I am definitely not yet ready for anything that involves more effort as it was still a bit hard work but still nice to get back to some baking and can't wait to eat these!
Taking time out from baking due to illness but having made my nephew's birthday cake for every year of his life so far, I couldn't let him down.
So this year he wanted a Lando Norris themed cake. Lando is his favourite Formula 1 driver. If you know F1 and Lando well then you will get this cake. If you don't, then it will seem like a very random cake! 🤣🤣. My nephew absolutely loved it.
Not really done any baking for a couple of months. Will be getting back into it soon as I have my nephew's birthday cake to make in a few weeks.
Yesterday I realised I had a tub of Philadelphia in the fridge that needed using up so the only thing to do in that situation is make a No-bake Biscoff Cheesecake. 😋
