These went down a treat last week, finished with Balvenie 12 and homemade salted tablet
On Saturday evening we catered a 3 course meal for a family dinner for one of our clients.
First course was Scottish smoked salmon mousse, beetroot jam, pickled fennel
The main was roast fillet of beef, fondant potato, roast parsnip purée, glazed heritage baby carrots, bone marrow and red wine jus
Dessert was dark chocolate brownie, salted caramel, vanilla pod ice cream and fresh berries

Another great night catering at DC Thomson on Saturday for the Tayside Trophy Dinner.
I served up a very traditional Scottish inspired 3 course menu of Cullen Skink, slow cooked blade of beef with fondant potatoes and a take on the classic Cranachan.
Always a pleasure cooking for this crowd and you can’t beat the view from the top floor!
