I have heard a few comments and read some on socials about all things Soly - some we can absolutely learn from ,some we don’t understand and some we love (because who doesn’t love compliments).

So I thought a wee update was in order!
So this week let’s start with the kitchen👨‍🍳

As the saying goes , If Calsberg made teams …. Most of the kitchen team has been in place for over ten years,no one has left though we are looking for some new chefs to compliment the team. They work almost telepathically , they also work exceptionally hard.

Food Suppliers and menus are still the same, we have changed from white Coley to Cod and added in some new dishes. We have also removed all peanuts from the premises, unfortunately peanut allergies are something we are asked to cater for and it’s an allergy that affects the team we felt it safer to remove them.

I haven’t been in the kitchen much mainly because these guys simply don’t need me but I’m really enjoying watching and learning.

Aioli made fresh daily, salads made with flavours of the day, kebabs hand made with chorizo,morcilla, pardons all imported and supplied by Iberico. Between 8am and midday the kitchen is a hive of activity with around 42 dishes prepped daily.

We are very much guided by the team and in awe of the hard work they do. We have also ordered new equipment to make life a little easier- counting the days until it comes…

A lovely photograph called Ryan Murphy caught our lovely wee shop bathed in beautiful sunshine this weekend. The saffron windows and edges are glowing away hopefully looking warm and welcoming.

New windows in this week and some stunning new doors as well as some other repairs as well as a few splashes of colour 🇪🇸

We create and make from scratch and with no menu we love to try new things.
The kitchen team speak Spanish, Polish and English so good communication is key.
Ideally you will have experience of working in a small kitchen and understand that we all help each other.

Now before you read this post and think the best thing for you to do is leave a negative comment can you have a wee think.? 164 hospitality business closed last month in Scotland. The way we survive is multiple income streams and using the space when it’s on “downtime”. While it’s not for everyone these are a popular part of our business. With over £12k in repairs (which we knew about before signing) needing completed these income streams are much needed. Peace ❤️

Dinner At Sol Y Sombra Tapas Bar, Broughty Ferry, Dundee | Review On The Sticky Beak Blog The Man Bird and I were slowly making our way southwards, his day job tasks in Scotland done. Our final night saw us land in Dundee well, Broughty Ferry, to be exact, and we

So we have had so many questions and a fair bit of feedback we thought we should answer some along with ask some of our own!

Do we take walk-ins?
Absolutely yes! And you are also welcome to pop in for a drink when we are open for lunch and dinner.

Has much changed?
No, not yet. New till and booking system. The team is all the same as is the menu concept. We will however be introducing a smaller lunch offer and mid week deals.

What will you be doing with the place?
So next week (weather permitting) the external repairs and painting will begin. We have a few outstanding repairs that need tidied up and some new additions to the building too.

We also have some new kitchen equipment coming in and an electrical upgrade to allow for that.

We will be looking to open on Friday and Saturday nights a little later to allow you to come in for drinks as well as bringing back some of the Salsa Sundays and out new Sol y Sundowners sessions.

Finally at the end of summer we will be looking to begin a small refit upstairs with the downstairs being scheduled for late winter.
So on that note which vibe do you all prefer?
Both are successful Tapas Bars in Spain one more modern and the other more Moorish.

We have live music until 2:30 and some treats out at the window for the window competition.

We are excited for our third weekend and to celebrate we have a new wine list. It has all the old favourites and some new ones to try too. Don’t worry the Sangria secret recipe came with us so we have plenty of that too!
