Not all single malts are created equalā€¦

A premium cask carries with it the heritage of a luxury brand and the provenance of production by a master distiller, while a mass-produced cask simply contains spirit. Thereā€™s an accepted industry hierarchy, and this can have a significant influence on your caskā€™s potential future value.

Generally, whiskey becomes more valuable as it ages. Many whiskeys are sold before they reach ten years of maturity, and the majority are bottled after ageing for just three years.

Why is so much spirit bottled so early? While the whiskey ages in its cask, it represents a cost to the distiller. It wonā€™t earn an income until itā€™s bottled and sold, and financial pressures will generally necessitate the sale of these spirits after just a few years.

Only a small proportion of a distilleryā€™s output will be able to mature into the finest premium spirit. These mature casks become increasingly scarce, and rarity can contribute to increases their value. šŸ„ƒ

In 1779, local merchant David Simpson established Bowmore Distillery, one of the oldest distilleries on Islay.

The first distillery on Islay to receive a license, Bowmore was officially founded in 1779. It is likely, however, that Simpson had been distilling in Bowmore since shortly after his arrival on Islay.

Claiming to be one of the worldā€™s oldest maturation warehouses, the No.1 Vaults has been maturing liquid for over 240 years. This stone warehouse sits on the shores of Loch Indaal and infiltrates the whisky with its unique character. The distillery also has its own Malt Barn which allows its barley to air and malt, and starts the process of germination.

Bowmore has changed hands multiple times throughout its history and is currently under the control of Beam Suntory. In 1993, the first expression from the Black Bowmore trilogy was released; a highly covetable series and popular amongst collectors. In 2012, the 1957 expression was released, becoming the oldest Islay single malt ever released. šŸ„ƒšŸ˜ŽšŸ„ƒ

Hi Guys, itā€™s James Waddell here, aka The Duke of Dram, the Brand Ambassador for Celtic Cask Co.

Last week at Whisky Live Trade Day I had the pleasure of speaking with the lovely people from Tamnavulin.

More importantly I got to drink some of their IWSC Gold Winning Red Wine Cask, which was absolutely amazing!

Hereā€™s my thoughts!

Tamnavulin Red Wine Cask Bottling Note
A terrific Tamnavulin, showing off the distillery's skills at using interesting cask finishes for its fab single malt Scotch whisky. This time, it's red wine! The whisky is initially aged in American oak barrels, but before it gets bottled, it enjoys a stay in French Cabernet Sauvignon wine casks, imparting a whole heap of warming dark fruit and sweet spice notes. I reckon this will make for an ace autumnal dram.

Tasting Note šŸ„ƒ

Nose: Marmalade on toast, stewed berries, nutty malt leading into warm vanilla.

Palate: Damson jam, almond flakes, liquorice, cinnamon, a hint of Turkish delight floral richness.

Finish: Ginger, strawberry, caramel, and dates.

Glenfiddich is a renowned single malt whisky distillery in Dufftown, Scotland. Glenfiddich means "valley of the deer" in Gaelic. The Glenfiddich distillery was founded in 1886 by William Grant.

Glenfiddich single malt is one of the most successful and well-known whisky brands in the world. The Glenfiddich distillery produces a wide range of whiskies, including the Glenfiddich 12-Year-Old, Glenfiddich 15-Year-Old, Glenfiddich 18-Year-Old, and Glenfiddich 21-Year-Old.

Glenfiddich was the first distillery with a visitor centre, which today receives 125,000 visitors per annum and underwent a Ā£1.7 million rebuild in 2005. World famous, Glenfiddich is the number one top-selling single malt whisky not only in the UK, but also globally.

Glenfiddich is one of three William Grant-owned whisky distilleries which sit in relatively close proximity to each other to the north of Dufftown, the spiritual heart of Speyside.

Glenfiddich was founded in 1886 by William Grant Balvenie fame. The Glenfiddich distillery is currently one of but three distilleries to bottle on site, and houses stills with a total annual capacity of 13 million litres. Furthermore, Glenfiddich matures its single malt whisky in its onsite warehouses, which can house up to 800,000 casks.

Following the end of the Second World War and the resulting surge in whisky demand, Glenfiddich was a relatively small brand and faced hefty competition from the blended scotch brands which held a veritable monopoly on the market.

Rather than competing directly, Glenfiddich concentrated on single malt sales and in 1963 became the first Scotch whisky to be marketed as such, flying proudly in the face of critics. The gamble paid off, and eleven years later sixteen new stills were installed to cope with demand.

As the national drink of Scotland and a beloved beverage the world over, there are plenty of fascinating facts about Scottish whisky.

From the origins of the name to the most expensive Scotch whiskies.

But did you know that you canā€™t call any old spirit Scotch whisky?

Real Scotch whisky has to meet strict requirements before it can be classed as authentic Scotch whisky by the Scotch Whisky Regulations Act in Scotland.

Real Scotch whisky must be produced and matured entirely within Scotland. If a cask even so much as rolls across the border into England, itā€™s no longer true Scotch whisky. It must also be matured in casks made of oak for a minimum of three years and one day, although many whiskeys are matured for considerably longer than this.

Authentic Scotch whisky must also have a minimum of 40% ABV (alcohol by volume) when bottled, known as being 80 proof.

Whisky making: The Art Of Ɖlevage

Rather than sealing the casks, and simply waiting for the end result, the process of Ć©levage can be used to create layers of flavour.

This approach is much more complex than putting a spirit in some wood and waiting. But it is this active commitment throughout the ageing process and the interplay between spirit, oak, and air that creates the majority of the whiskyā€™s flavour.

Ɖlevage demands patience. It also needs the whiskymaker to know each cask intimately. They have to understand how the flavours are evolving. How they can be blended with others to complement, enhance, deepen, broaden, or contrast.

Time, of course, matters. But other influences come into play as well, that can transform a relatively young spirit into flavoursome whisky with a significantly older profile.

When pairing whisky with a cigar, it is important to consider the flavours and characteristics of both the whisky and the cigar.

Louis Moinet, in cooperation with Wealth Solutions, released the Whisky Watch in 2017 with a drop of the oldest whisky in the world, Old Vatted Glenlivet 1862, inside.

It features a three-level dial with applied open-worked markers, seconds indication via a subdial at 9:00, and the exclusive whiskey capsule at 3:00. The Whisky Watch is powered by the LM45 automatic movement, with 22 jewels. Just 50 pieces will ever be made. It was offered in stainless steel (40 pieces) for 18,000 Swiss Francs (Ā£16,150) and in 18-karat rose gold (10 pieces) for 46,000 CHF (Ā£41,290).

Did you know that Glenfiddich means ā€œvalley of the deerā€ in Gaelic. This is why this Speyside whisky brand bears a stag as their logo.

Pictured is a limited-edition single malt from Glenfiddich, Cumulative Time is a 40-year-old whisky made by combining specially-selected butts and hogsheads with the distillery's marrying tun, that contains some of the previous batches of impressively-aged whisky.

Which will set you back around Ā£3,500

The bottle is presented in a handmade jesmonite box, each one unique and unable to be perfectly replicated due to the subtle markings of the jesmonite, and each bottle is sealed with a striking jesmonite stopper.

TASTING NOTES

NOSEā€ØElegant old wood leads: sandalwood and wax-polished oak. Spongecake, butterscotch and singed caramel follow, along with candied peel and stewed apple dusted with cinnamon and brown sugar. Creamy coffee with toffee syrup (a Double Tall Latte done right) leads to hints of sharper oak and apple, almost hidden under layers of soft oak and toffee. Orange oil notes develop with time in the glass.

PALATEā€ØToffee and sherbet lemons at first. Hints of char and fresh-cut oak are quickly submerged under polished oak, spiced apple and anise. Gentle grassiness runs through the middle, with sultanas and coffee cream as a sweeter and bitter contrast. Darker spices and tannic notes slowly build.

FINISHā€ØPolished oak, damp driftwood and aniseed spice linger. They fade to reveal raisins and hints of mint. Long and very pleasant.

UNDERSTANDING WHISKY FLAVOUR BY KNOWING THE GRAINS USED
While each whisky is unique in its own way, they are generally described as warm, spicy, sweet, toasty or caramelly. Understanding the grains used and their ratio that goes into making your favourite dram heightens your ability to recognise, appreciate, and savour your favourite whiskies. Each whisky starts with corn, rye, barley, or wheat grains. Most whiskies are made with a blend of multiple grains to create texture, depth, and flavor. Here is a quick rundown of the commonly used grains in your favourite whiskies.

BARLEY
Those who need a punch should drink a glass made from barley. This grain is primarily used for Scotch and is malted and dried with peat. Peat adds a smoky earthiness to its flavor profile. Scotch and Irish whiskies are traditionally aged in used barrels, often including sherry casks. Ageing Scotch in these containers mellows out the mixture while adding fruit and spice notes to the flavour.

CORN
Corn grains are best for those who need an easy-drinking beverage. Corn-grained whiskies have honey, browned butter, and creamy flavors to create a magnetic base thatā€™s perfect for sipping. Its notes of toasted marshmallows add a hint of flavor that sets your taste buds over the edge.

RYE
If you prefer a little more intensity with your whiskies, rye adds a perfect amount of spice. Rye boasts the same ripe and dried fruit flavors as corn-based whiskies but with some extra spicy and nutty flavors. That makes them rich and undeniably unique. The spirit must be made from at least 51% rye grain and aged in charred American oak barrels to be labeled rye.

WHEAT
Wheat whiskies have emerged in rising popularity. Almost all wheat whiskies come from the United States. Like Kentucky Bourbon, wheat based bourbon is smooth and has a sweeter profile as you can find vanilla, honey, dried berries, and toffee notes.
