One of the malts we offer at The Bonnington

Balvenie DoubleWood 12yo

Balvenie DoubleWood is, to not much surprise, aged in two kinds of oak casks! It was firstly matured in refill American oak casks before it was treated to a finish in first fill European oak Oloroso sherry butts for an additional nine months. The expression was launched in 1993, and has become a somewhat iconic whisky over the years. Even at 12 years old, this rich and complex dram is an excellent example of what the Balvenie distillery can craft.

Tasting Note:

Nose
Gristy, supple nuttiness intertwined with spices. Honeyed sultanas and grapes. Hugely inviting.

Palate
Sweet with good body. The bourbon characters develop; gentle spice with a little vanilla, a hint of balancing peat lurking quietly in the substrata. Dried fruit too, combining with nuts, nutmeg, cinnamon, back into the bourbon notes - so well integrated.

Finish
Spicy, slightly drying, still sweet.

Overall
A classic, always a pleasure to revisit. (This is also a single malt with the ability to convert a non-whisky drinker with its deliciousness...)

Did you know that Scotland has a giant 3D map made of concrete? 🤯 It's called the Great Polish Map of Scotland and it's located in the grounds of Barony Castle Hotel. It was built in the 1970s by Polish war veterans as a token of gratitude for the Scottish hospitality they received during WWII. The map is a masterpiece of art, history, and geography, showing the intricate topography of Scotland in amazing detail. It's also a symbol of friendship and solidarity between two nations that fought for freedom and democracy. 🏴󠁧󠁢󠁳󠁣󠁴󠁿🇵🇱

DID YOU KNOW!

The Bonnington Waterwheel and Lade

This waterwheel is the only surviving example of dozens that once powered mills all along the Water of Leith. It originates from the Bonnington Mills, off Newhaven Road, and was moved to this site in the old mill lade following its restoration in the 1980's.
Today the wheel sits on a small section of the old mill lade. Sluice gates at Redbraes weir would have controlled a man made flow of water along the canal-like lade. The lade flowed across the
'haugh' to the mill, where the water would have rushed under the wheel causing it to turn and generate power, then the water would return to the river.

The power generated by this and many other
'undershot' wheels in Bonnington was used to mill grain, weave cloth, tan leather and manufacture paper.
