There is still time to make these glorious (and flourless) vegan rhubarb and ginger muffins before rhubarb disappears✨

In case you missed the recipe a few posts back, here it is💛

INGREDIENTS
1 medium apple
1/2 cup tinned coconut milk
2 tbs chia + 10 tbs water
1 tbsp apple cider vinegar
3 tbs maple syrup
2 1/2 cups oat flour (blended oats)
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground or fresh ginger
1/2 tsp salt
1 medium stick of rhubarb chopped

METHOD
→Preheat the oven to 180℃
→Chop the apple and simmer in a saucepan with a splash of water until soft then blend with the coconut milk, apple cider vinegar and maple syrup
→Combine the flour, baking powder, soda, ginger and salt then fold through the wet mix and finally the rhubarb
→Fill your lined muffin tins 3/4 of the way and bake in the oven for 20-25 mins

Just dropping you these fudgy salted sourdough brownies - that’s correct I said SOURDOUGH BROWNIES✨

I was looking for a way to use up my discard started during feeds in a tasty way, and TA DAAAA these gooey and rich squares of goodness were born🤤

We can now go and sit in the parks!!🍪 so why not enjoy the sunshine with a gooey coconut choc chunk oatmeal cookie

These are the most glorious snack or treat made with wholesome ingredients and studded with chocolate (my fave ever!) They are so good I’ve already had 3 today - it is definitely worth doubling the recipe up😅

INGREDIENTS✨
1 tbs chia seeds + 5 tbs water
60g coconut sugar
40g coconut oil
1 tsp vanilla
90g oat flour
70g rolled oats
30g shredded coconut
1/4 tsp bicarbonate of soda
Sea salt
50g mylk and vanilla chocolate

METHOD✨
~Preheat the oven to 180*C then mix the chia seeds and water together and set aside
~Next melt the coconut oil in a sauce pan and cool before mixing with the sugar, chia seeds and vanilla
~Fold in the remaining ingredients including the chopped chocolate reserving some for the topping
~Using am ice cream scoop divide the dough into 9 cookies and spread them out on a baking tray pressing down gently, bake for 8-10 minutes and allow to cool 30 mins before enjoying

SAVE THE RECIPE 🚨 Odds and ends pasta✨

My favourite kind of cooking is spontaneous and using up whatever I have in the fridge to minimise food waste😊

This pasta is easy, tangy, fresh and perfect to use up those wilting veggies🕺🏼

INGREDIENTS
4 portions of pasta

Garlic + onion

Bunch of any herbs (I used mint, parsley, thyme and sage)
Handful of fresh or sun dried tomatoes
Handful of nuts or cooked chickpeas
1/2 lemon
Sprinkle of nooch
Salt + pepper
Splash of white wine

Green veggies- I used spinach, asparagus and courgette but use anything you have

METHOD✨
~Roast the green veg in olive oil, dried herbs salt and pepper and bring the pasta to a boil
~Place the herbs, tomatoes, chickpeas or nuts, lemon, maple and nooch in a blender and season (it will be thick)
~Sauté the onion and garlic then add the thick sauce and cook for a few mins before deglazing with the white wine, once the pasta is aldente add it to the sauce along with a splash of the cooking water
~Mix in the roasted green veggies and enjoy!

SCROLL FOR RECIPE - rhubarb, coconut yogurt poppy seed cake✨

Okay this recipe was HIGHLY requested by you guys, and tbh I’d be mean not to share it cause it’s just soooo gooooood😜

INGREDIENTS✨
1/3 cup melted coconut oil
1/3 cup + 2 tbs maple syrup
1 tbs grated ginger or orange zest
3/4 cup
1/4 cup plant milk
2 tbs chia seeds mixed with 10 tbs water
1 tsp vanilla
1 tbs ACV
3 cups flour (I used half white spelt and half wholemeal)
1 1/2 tsp baking powder
3/4 tsp baking soda
Salt
1 tbs poppy seeds
2 rhubarb stalks, chopped into 1 inch batons

METHOD✨
~Preheat oven to 180*C, then mix the chia seeds with the water and set aside
~Mix the wet and dry ingredients in separate bowls, then combine the two mixes until there are no lumps
~Pour the batter into a lined baking tin, then top with the rhubarb slices and finish with a sprinkle of brown or coconut sugar
~Bake in the oven for 40-50 minutes or until a tooth pick comes out clean
