Sometimes we all get in a rut and that one week "holiday" becomes a permanent "holiday" and even knowing the sooner you come back, the sooner you can gain control, doesn't stop you thinking "I'm too embarrassed to go back again"
Please know if you've lost your way a bit, but you still have weight loss goals that there is absolutely never any judgement and it really is so nice when I see members returning to group 💖

🤩Recipe of the Week🤩
🤩Air fryer Korean chicken🤩
Sticky, sweet and (lightly) spicy, this dish has some smashing ‘s’ words going for it – including slimming!
🤩Ingredients🤩
⭐️600g skinless and boneless chicken thighs, halved, visible fat removed
⭐️1 tbsp rice vinegar
⭐️½ tbsp soy sauce
⭐️1 tsp paprika
⭐️½ tsp garlic granules
⭐️4 level tbsp cornflour
⭐️2 eggs, beaten
⭐️Plain boiled rice and your favourite Speed veg, to serve
⭐️1 level tsp sesame seeds, to serve
⭐️3 spring onions, finely sliced, to serve
For the sauce:
⭐️Low-calorie cooking spray
⭐️2 garlic cloves, crushed
⭐️1 tsp grated fresh ginger
⭐️2 level tbsp gochujang paste
⭐️1 level tbsp honey
⭐️2 tbsp tomato purée
⭐️1 tbsp soy sauce
⭐️1 level tsp sesame oil
🤩Method🤩
⭐️In a bowl, combine the chicken thighs with the vinegar, soy sauce, paprika and garlic granules. Cover and chill for at least 1 hour, or overnight. Preheat your air fryer to 190°C.
⭐️Set 2 shallow bowls side by side and put the cornflour in one and the beaten eggs in the other. Dip the chicken pieces in the egg, then the cornflour to coat all over. Cook the chicken in the air fryer for 20 minutes, turning halfway.
⭐️Meanwhile, make the sauce. Spray a small non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the garlic and ginger and cook for a minute or so, before adding the remaining ingredients and 50ml water. Stir until combined and leave the heat on low to warm the sauce through.
⭐️Remove the chicken from the air fryer, transfer to a bowl and pour over the sauce. Divide between 4 bowls along with the rice and Speed veg, and serve sprinkled with the sesame seeds and spring onions.

🤩Recipe of the Week 🤩
Mozzarella arancini
We’ve slashed the Syns in these Sicilian risotto balls by baking them rather than deep-frying. Bellissimo!
🤩Ingredients 🤩
⭐️Low-calorie cooking spray
⭐️1 onion, finely chopped
⭐️2 garlic cloves, crushed
⭐️300g dried risotto rice
⭐️900ml vegetable stock
⭐️Large handful fresh parsley, finely chopped
⭐️80g reduced-fat mozzarella
⭐️2 eggs, beaten
⭐️2 slices wholemeal bread (from a small 400g loaf), whizzed into breadcrumbs in your food processor
⭐️4 level tbsp grated fresh Parmesan, or vegetarian alternative
⭐️Your favourite Speed veg, to serve
For the sauce:
⭐️Low-calorie cooking spray
⭐️1 large onion, finely chopped
⭐️2 garlic cloves, crushed
⭐️1 tsp dried oregano
⭐️Small handful of chopped basil leaves, finely chopped, plus extra whole leaves to garnish
⭐️400g can chopped tomatoes
⭐️1 level tsp sweetener granules
🤩Method 🤩
⭐️To make the arancini balls: Spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the onion and garlic and cook for 5 minutes until softened. Add the rice with a splash of stock, stirring until the stock’s absorbed. Carry on adding the stock a little at a time, stirring until it’s all fully absorbed and the rice is cooked - this will take about 20 minutes. Remove from the heat and leave to cool. If you have time, once the mixture’s cold, chill it for 1 hour, or overnight if you can.
⭐️Preheat your oven to 190°C/fan 170°C/gas 5. Stir the parsley into the cooled rice and season lightly. Using dampened hands (it’ll help stop them getting too sticky), divide the mixture into 16 equal portions. Flatten a portion in your hand and put a piece of mozzarella in the centre, then bring the sides up, seal the top and roll into a ball. Repeat with the remaining rice portions and mozzarella.
⭐️Put the eggs and breadcrumbs into two separate shallow bowls. Dip each ball into the egg followed by the breadcrumbs, then put them on a non-stick baking tray.
⭐️Spray the arancini with low-calorie cooking spray and bake for 25 minutes.
⭐️Meanwhile, make the sauce: Spray a medium non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the onions and garlic and cook for 5 minutes, or until softened. Stir in the dried oregano, basil, tomatoes, sweetener and 100ml water. Season to taste and simmer gently for 20 minutes.
⭐️Divide the sauce between 4 bowls and top each one with 4 arancini balls and 1 level tbsp Parmesan. Add a few whole basil leaves and serve with your chosen veg.

Our new research reveals that more than half of UK adults have followed a fad diet – with 38% of those saying they’d found the diet while using social media 📳.
Despite the constant flood of “quick fix” and “miracle” trends on our screens, 71% of UK adults questioned who’d tried a fad diet said they didn’t lose the weight they wanted 💔 and 11% actually gained weight.
Meanwhile, 93% of Slimming World members questioned in the survey reported that they felt equipped for long-term weight loss after joining our evidence-based service – thanks to the on-going support we’ve provided for the last 55 years ✨.

🤩 Recipe of the Week 🤩
Veggie quesadilla
Easy, beany and oh-so-cheesy...
Deduct 3 Syns if using the Cheddar as half a Healthy Extra ‘a’ choice.
Our trio of summer salsas is the perfect dip for this dish — pick your favourite, or try all three
🤩Ingredients 🤩
⭐️Low-calorie cooking spray
⭐️½ medium red onion, finely diced
⭐️1 medium red pepper, deseeded and diced
⭐️1 garlic clove, crushed
⭐️½ tsp cumin
⭐️½ tsp chilli powder
⭐️½ x 400g can black beans, drained and rinsed
⭐️½ x 200g can sweetcorn, drained
⭐️2 tortilla wraps (around 65g each)
⭐️90g Cheddar, grated
⭐️Slimming World salsa, fat-free natural yogurt and mixed salad, to serve
🤩Method🤩
⭐️Spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the onion, pepper and garlic and cook for a few minutes until softened. Add the spices and cook for a further minute.
⭐️Remove from the heat, add the beans and sweetcorn and stir everything together.
⭐️Spray another large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add a tortilla to the pan, and spoon half the bean mixture then half the cheese along one side of the wrap. Fold it over and cook for a few minutes, then flip and cook for a couple of minutes more.
⭐️Remove from the pan and repeat to make a second quesadilla. Slice each quesadilla into 3 triangles, divide between plates and serve with the salsa, fat-free natural yogurt and salad.
